Perfect with harissa yogurt, these Carrot Fritters bring the heat and amazing texture as an appetizer, lunch, or a side for your favourite North African dishes.

I must say, I do love a flavoursome veggie fritter with a great texture. They are so easy to make using just a box grater, a large mixing bowl and a nonstick skillet! Ingredients and Substitutes
- carrots: you will need about 2 large carrots to make 7-8 fritters, peeled and coarsely grated.
- egg: we used a medium egg.
- plain flour: also known as all-purpose flour. You may also replace regular flour with chickpea flour.
- ras el hanout: or garam masala or your favourite curry powder.
- garlic cloves: minced.
- spring onions: also known as green onions. You may replace it with fresh parsley or fresh coriander.
- salt and black pepper.
- neutral oil: for frying. We used vegetable oil, but sunflower or avocado oil will work too.

Step-By-Step Method
1. Place the grated carrots, garlic, spring onions, egg, flour, ras el hanout, salt and pepper in a large bowl. Mix everything until well combined.


2. Heat just enough oil to cover the base of a large frying pan over medium heat.
3. Form 6-8 carrot patties with your hands, flattening the carrot mixture slightly as you go and placing them directly into the pan. Alternatively, place large spoonfuls into the pan flattening them with the back of the spoon.
4. Fry the carrot fritters in hot oil for 4 minutes on each side until crispy and deep golden brown.


5. Place the fritters on a plate lined with paper towels to absorb any excess oil.
6. Serve with harissa yoghurt or your favourite dip!

Tips For Best Results
- Mix it up every time you make them by using a different spice blend. We love them with medium curry powder, garam masala, berbere spices and baharat! Have a look at some ras el hanout alternatives here.
- For the best texture, fry the fritters in plenty of oil and serve immediately.
- Flatten the carrot fritters quite a bit, they should be no more than 1cm thick in order to cook through without burning. However, the carrots should still retain a little crunch!
- If your carrot fritters are falling apart, you may need to add a little more of a binding agent (egg, in this case).
Sauce For Carrot Fritters
These simple carrot fritters are flavoursome enough to be served with plain sour cream, but we highly recommend trying our Harissa Yogurt Sauce with them. We also love them with the following sauces and dips:

How To Serve These Carrot Fritters?
Our Carrot Fritters make a fantastic lunch. Simply serve them alongside a delicious salad (we recommend Pea Shoot Salad With Edamame Beans or Courgette Ribbon Salad as a side salad). If you want some protein, serve it with a small charcuterie board on the side to make a wonderful complete meal.
Another great way to serve these crispy fritters is as a side dish to Moroccan-inspired dishes like Ras el Hanout Chicken Thighs or even Lamb Tagine.
Storage
To ensure crispy fritters, we recommend making no more than you need, but if you have leftovers, let the remaining fritters cool down to room temperature, then store them in an airtight container in the fridge for up to 4 days.
The best way to reheat them is by arranging them in a single layer on a baking tray lined with parchment paper and placing them in a preheated oven for 6-8 minutes. You can also eat them cold at a later date.
