    Why Overnight Matcha Oats Make A Great Breakfast

    But What Is Matcha?

    Matcha is a finely ground green tea powder made from shade-grown green tea leaves, known for its vibrant colour and earthy flavour. Popular in everything from a matcha latte, Matcha Panna Cotta to various baked goods (we love our Matcha Sourdough Bread and Matcha Sourdough Cookies), matcha is full of antioxidants and vitamin C (amongst other claimed health benefits of matcha). 

    The taste of matcha can range from sweet and grassy to rich and umami, depending on the type of matcha used (lower-quality matcha can have a bitter flavour). Traditionally whisked into matcha tea, it's a versatile ingredient that's perfect for giving your oats a nutritious, delicious twist!

    Ingredient Notes

    Here are all the simple ingredients you'll need to make this delicious breakfast recipe:

    • rolled oats: a.k.a. porridge oats. You can use steel cut oats, but they will take at least 12 hours to soften.  
    • chia seeds: optional, but recommended. You may choose to add ground flax seeds instead. 
    • matcha powder: we highly recommend using ceremonial grade matcha.  
    • pure maple syrup: or other natural sweeteners like agave syrup or honey. 
    • Greek yogurt: non-dairy thick and creamy vegan yogurt also makes a great alternative. 
    • milk: we used dairy milk on this occasion, but non-dairy milk like soya, coconut milk or oat milk can also be used. 
    • frozen or fresh berries: optional.

    Step-By-Step Method

    1. Place rolled oats in a medium bowl. Add chia seeds and matcha powder and mix well.

    2. Add the liquid ingredients next: milk, maple syrup and yogurt and stir to combine.

    3. Finally, add the frozen (or fresh berries) to the oat mixture.

    4. Cover the bowl, or spoon the mixture into individual glass/mason jar or smaller bowl, and leave the oats in the fridge for at least 6 hours (more if you used frozen berries), or ideally, overnight.

    5. Just before serving, add your favourite toppings, like granola, extra berries and a drizzle of maple syrup. Stir and serve!

    Topping Ideas

    I like to pair my overnight oat toppings with the milk I use. I love banana slices, fresh fruit or berries if I use dairy-milk. 

    A delicious way to enhance coconut milk flavour in the matcha overnight oats is to add toasted coconut flakes and some crunchy granola, made with coconut oil. 

    Some great options for overnight oats made with nut milk would be peanut butter (or almond butter) and nutty granola (we love Maple and Pecan Granola made with Sourdough Discard). 

    Finally, a generous drizzle of maple syrup goes with EVERYTHING!

    Recipe Tips For Best Results

    • Store prepared matcha overnight oats in an airtight container for up to 4 days - great for meal prep!
    • Adding a dash of vanilla extract to your oats is a great way to mellow the matcha flavour if you're not a big fan!
    • Add a little extra milk in the morning if your overnight oats are looking too thick for your liking. 
    • Make sure to use ceremonial grade matcha for the best flavour (instead of culinary-grade matcha, which is best reserved for baking!).
