Ingredients and Substitutes
Just a handful of ingredients for this delicious breakfast bowl.
- sweet potato puree: you may use canned sweet potato puree (you can also find pureed sweet potato in baby food section – I am not joking – it’s fantastic!) or make your own (see recipe below). Canned pumpkin puree also makes a great alternative.
- rolled oats: or porridge oats.
- milk: you may use dairy milk or a plant-based alternative, like soya or almond milk.
- pumpkin spice or mixed spice: or ½ teaspoon of each cinnamon, nutmeg and ginger.
- maple syrup: adds natural sweetness to the porridge. It can be replaced by honey, agave syrup or simply sugar.
- yogurt: Greek yogurt or plant-based alternatives.
Fancy something extra? Stir in a teaspoon of vanilla extract into your porridge, or add orange zest to make the porridge even more flavoursome.

- Roast Method:
- Preheat your oven to 400°F (200°C).
- Toss them with a little bit of oil
- Roast them on a baking tray for 45-60 minutes or until they are soft.
- Scoop the flesh out of the cooked potatoes and mash to create a flavorful puree.
Store your sweet potato puree in an airtight container in the fridge for up to 4 days.

Method
If you don’t have a sweet potato puree already, make it first. You will ideally want to make the puree the night before. Cook your sweet potato until tender (you may boil it, steam it or bake it). Mash the flesh into a puree.
Place oats, milk, spices and half of the maple syrup into a saucepan and cook over low heat for 5-8 minutes until it thickens to a desired consistency.
Stir the porridge after a few minutes of cooking with a wooden spoon to prevent it from sticking to the bottom of the pot. Stir in sweet potato puree and cook just enough to warm it through. Add some more milk, if your porridge turns too thick.

Divide sweet potato porridge between bowls and top with toasted pecan nuts, a dollop of yoghurt and drizzle with the remaining maple syrup.

What Goes Well With Sweet Potato Porridge?
Whether you are looking to add extra flavour to your sweet potato porridge or simply change it up with your favorite toppings, here are some flavours that go well:
- Swirl some almond butter (or peanut butter) through your sweet potato porridge.
- Top the porridge with fresh fruits (sliced bananas, grated pear or apples tossed with some lemon juice, figs and plums go particularly well).
