Christmas Eggnog Latte
One of the signs that Christmas is just around the corner is when you start seeing people carrying famous red cups around! But it's what's inside the cups that matters! And our absolute holiday favourite is none other but a Christmas Eggnog Latte. This creamy eggnog flavoured coffee is both a coffee and a dessert in a cup! Try it! It tastes exactly like the one you know and love from the coffee shop!
For the Eggnog:
- 25 g caster sugar + 35ml of water
- 2 egg yolks
- 1 tsp vanilla paste
- 200 ml condensed milk sweetened
- 50 ml dark rum or brandy, or spiced rum
For One Mug of Eggnog Latte:
- 40 ml eggnog
- 160 ml milk
- 1 shot of espresso single or double
- a pinch of nutmeg
To Make Eggnog:
In a small saucepan, mix caster sugar and 35ml of water. Simmer on low heat until sugar has dissolved. Then take off the heat at leave to cool.
In the meantime, beat egg yolks and vanilla paste. Add condensed milk and rum and beat again until smooth. Finally, mix in the cooled sugar syrup.
Pour your eggnog into a airtight bottle and chill in the fridge.
For the Eggnog Latte:
Make yourself a shot of espresso.
In a milk jug, mix milk and eggnog and stir to combine. Froth, as usual, using a steam attachment on your coffee maker or an electric milk frother.
Pour hot eggnog milk over your espresso, dust with some nutmeg and enjoy!
