Whisk milk, sugar, egg and mincemeat together in a large mixing bowl.
In a separate bowl, mix the flour and baking powder.
Add the dry ingredients to the wet ingredients and mix to combine. Ensure there are no dry pockets of flour.
Put a large frying pan over low-medium heat with oil (or a small amount of butter). Add large spoonfuls of the pancake batter into the pan and fry for 1-2 minutes on each side, until cooked through, puffed up and golden brown.
To keep the pancakes warm, preheat the oven to 100 C, and keep the cooked pancakes in a single layer on a baking sheet until you are done with the rest of the batter.
