On a hot summer day, nothing beats the refreshing crunch of crisp cucumbers and juicy tomatoes. This Cucumber, Tomato and Feta Salad is the perfect side dish – light, vibrant, and ready in minutes. With simple ingredients and fresh flavour, it’s a great way to enjoy peak-season produce without fuss. The best part? This is a cucumber and tomato salad with feta you can make ahead for barbecues, picnics, or a light lunch.
Place cucumber, tomatoes, basil and most of the feta in a large mixing bowl (reserve some feta for scattering on top).
To a small jar, add the balsamic vinegar, olive oil, minced garlic clove and a pinch of salt and pepper. Screw the lid on and shake the jar for a few seconds to combine.
Pour the dressing over the salad and toss gently to avoid breaking up the feta.
Scatter the remaining feta cheese on top and serve!
Notes
*In the photos shown in this recipe article, the cucumbers have seeds scraped out from the middles of the cucumbers. This isn't necessary, especially if you're serving the salad immediately. We had overgrown garden cucumbers on this occasion and chose to scrape out the seedy cores in order for the salad not to become watery.
