120griceshort-grain, but long-grain works well too
½ripe mangocut into chunks
60gedamame beanscooked
70gcucumbersliced into matchsticks
¼bell pepperthinly sliced
2spring onionsthinly sliced into matchsticks
100gsmoked salmon
1teaspoonsesame seedstoasted
Instructions
Cook rice following the packet instructions.
Make the dressing by placing the lime juice, sesame oil, rice vinegar, soy sauce and a pinch of salt and pepper in a jar, and shaking it vigorously for 30 seconds.
Once cooked, drain the rice and divide it between two bowls. Top the rice with all the vegetables and arrange pieces of smoked salmon on top.
Drizzle the dressing all over, scatter the top with sesame seeds and serve!
