If you’re after an easy yet impressive tart recipe, this Pear Tart With Puff Pastry is your answer. With a buttery base, sharp cheddar, and fresh pears sliced thin, it’s a delicious recipe that comes together in no time. Finished with a drizzle of honey, it’s the perfect balance of sweet pear and savoury goodness.
Take the pastry out of the fridge about 20-30 minutes before starting to bring it to room temperature (but keep it in the packet). Unrolling cold pastry will make it crack.
Preheat the oven to 200°C.
Unroll the puff pastry onto the parchment paper sheet it was rolled in and place it onto a baking sheet.
Score a border around the pastry about 1.5cm in from the edge. Brush the edge of the pastry with the egg, if using (it's not necessary, but it will give the edge a lovely deep brown colour).
Place the pastry in the oven for 20 minutes. It should puff up and crisp up, and turn light golden brown.
Once the pastry is done, take it out of the oven and carefully deflate the puffed-up middle by pressing a spatula down onto it.
Scatter the grated cheese all over the centre avoiding the edge.
Arrange the sliced pears on top.
Bake the tart for 15-20 minutes until the pastry edges are deep golden colour and the pears soften.
In the meantime, in a small dry pan, toast the pecan nuts.
Once the tart is baked, drizzle the top with honey, scatter the pecans on top and sprinkle with a little sea salt.
