2bell peppersdesseded and cut into bite-size pieces
2x400g tins of chopped tomato
2tablespoontomato pureea.k.a. tomato paste in the US
1.5tablespoonpaprika
1.5tablespoonsmoked paprika
1tablespoonbrown sugar
300mlbeef stock
200gsour cream or creme fraiche
Instructions
Place beef chunks with salt, pepper and flour in a large mixing bowl and mix just enough to coat.
Heat a drizzle of oil in a large frying pan, and fry the beef in batches just enough to brown all over.
Spoon the browned beef in the bowl of your slow cooker.
To the same pan, add the onions, pepper and garlic and stior-fry on hight heat until charred, but not soft (this is just tp collect any leftover flavorus from searing the beef in the pan). Tip the vegetables in the slow cooker.
Add the tinned tomatoes, tomato puree (tomato paste in the US), paprika and smoked paprika, sugar and the stock into the slow cooker. Give everything a stir and put the lid on.
Set it on low setting for 8 hours, or high for 4-5 hours (note that cooking time will depend on each individual slow cookers). The beed cubes should be melt-in-the-mouth tender when cooked.
Swirl the sour cream into your slow cooked goulash and serve garnished with parsley.
