Sourdough Apple Cake Recipe With Discard

For The Apples

  • 450 g apples cored, peeled and diced
  • 1 teaspoon cinnamon
  • 1 tablespoon light brown sugar

For The Sourdough Cake Batter

  • 150 g caster sugar
  • 50 g light brown sugar
  • 2 eggs medium
  • 100 ml neutral oil vegetable or sunflower
  • 200 g sourdough discard 100% hydration
  • 110 g plain flour all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder

Instructions
 

  • Preheat the oven to 170°C (340℉). Line a 24x24cm (9 in) baking tray with a sheet of parchment paper.
  • Dice the apples into 1 cm cubes. Mix them with sugar and cinnamon in a large bowl and set them aside.
  • Add the white sugar and brown sugar into a large mixing bowl and mix to combine.
  • Add the eggs, and using an electric handheld mixer or a balloon whisk, beat the mixture until thick and creamy.
  • Whilst whisking, in a steady stream, pour in the oil.
  • Add sourdough discard and mix well to incorporate.
  • In a separate bowl, combine the flour, baking powder and salt. Mix the dry ingredients into the wet ingredients gently.
  • Pour the cake batter into the prepared baking tray. Scatter the apples in an even layer over the cake batter.
  • Place the cake in a preheated oven for 50-55 minutes until a wooden skewer inserted into the middle comes out clean.
  • Once baked, leave the cake to cool down completely in the tin.Then lift it out holding the overhanging parchment paper, and slice into portions!
