Sourdough Onion Rings

Made with simple ingredients and a light, bubbly batter, they deliver a delicate crunch with a very subtle tang from the sourdough. Ingredients
 
 

For Sourdough Batter

  • 45 g plain flour all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ⅛ teaspoon turmeric
  • a generous pinch of salt
  • 100 g sourdough discard, 100% hydration
  • 90-100 ml cold sparkling or still water, or beer

Other Ingredients:

  • 1 large onion sliced into rings
  • 3-4 tablespoon flour for coating onion rings
  • neutral oil for frying
  • 60 g panko breadcrumbs

Instructions
 

  • Lay the onion rings in a single layer on a few sheets of paper towel and pat dry from the top to remove excess moisture.
  • In a small bowl, mix the flour, baking powder, garlic powder, paprika, and turmeric. Season with a pinch of salt and black pepper.
  • In a separate bowl, whisk together the sourdough discard and 90 ml of cold sparkling water.
  • Add the dry mix into the discard mixture and stir until fully combined.
  • Heat about 1-2 cm of neutral oil in a frying pan over medium-high heat. It should reach 180°C-190°C (350°F-370°F).
  • Place the flour for the coating in a shallow bowl.
  • Dip the onion rings in the flour.
  • Then dip them into the sourdough batter, coating well. Then coat them in panko breadcrumbs.
  • Carefully place the coated onion rings into the hot oil in batches.
  • Fry for about 2-3 minutes turning them a couple of times. They should be golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain any excess oil.
  • Serve immediately!
