Sourdough Peanut Butter Blossoms

These Sourdough Peanut Butter Blossoms take the classic peanut butter cookie and give it a sourdough twist, making them irresistible for peanut butter lovers and anyone looking to elevate their Sourdough Christmas Cookies collection. With a subtle tang, melt-in-your-mouth softness and a perfectly set Hershey’s Kiss, these are the kind of sourdough peanut butter cookies you’ll bake every December.
Ingredients
- 100 g granulated sugar plus extra for rolling
- 100 g light brown sugar
- 60 g unsalted butter softened
- 135 g smooth peanut butter*
- 130 g sourdough discard 100% hydration
- 1 large egg
- 220 g plain flour all-purpose flour
- 10 g cornflour corn starch
- 1 teaspoon baking soda bicarbonate of soda
- ½ teaspoon salt
- 30 chocolate kisses Hershey’s or similar
Instructions
- Preheat your oven to 190°C (375°F). Line two baking sheets with parchment paper.
- In a large bowl, beat the granulated sugar, brown sugar, softened butter and peanut butter until creamy and smooth.
- Add the egg and sourdough discard. Mix again until fully combined.
- In a separate bowl, whisk together the flour, cornflour, baking soda and salt.
- Add the dry ingredients to the peanut butter mixture and mix until a soft dough forms.
- Scoop out dough using 1 tablespoon portions and roll each piece into a ball.
- Roll each dough ball in extra granulated sugar, then arrange them on the prepared baking trays, leaving space to spread.
- Bake for 8–10 minutes on the centre rack — the tops should look slightly puffed and just set.
- Immediately press a chocolate kiss into the centre of each warm cookie.
- Transfer the cookies to a cooling rack and let them cool completely so the chocolate sets.
