Sourdough Plum Cake (German Style Plum Cake With Discard)
If you have plum trees in your garden or love seasonal baking, this Sourdough Plum Cake is about to become your new favourite. This delicious treat combines the rustic charm of a traditional German plum cake with the tang and moisture that only sourdough discard can bring. Perfect for plum season, it’s a wonderful way to use up fresh, juicy fruit and a little sourdough starter you might otherwise discard.
Lightly grease a 23cm (9-in) loose-bottom cake tin. Line the base with parchment paper.
Wash, destone and quarter the plums (if you're using very large plums, you may cut them into 6 wedges).
In a large mixing bowl, using an electric handheld mixer, beat the softened butter, sugar and vanilla bean paste until smooth and creamy, about 2 minutes.
One at a time, add the eggs, and keep beating until combined.
Finally, add the sourdough discard and beat just enough to combine.
In a separate bowl, mix the flour and baking powder.
Add the dry ingredients to the wet ingredients and, using a rubber spatula, fold everything together (avoid overmixing).
Scoop the mixture into the prepared cake pan, and smooth out the top.
Arrange the plums in concentric circles on top, leaving hardly any gaps in between.
Make the streusel topping by combining flour, sugar and cinnamon in a large bowl.
Add the butter, and rub with your fingers to create lumpy crumbs.
Scatter the streusel topping on top of the plums and place the cake in the centre of the oven for 50-55 minutes.
Allow the cake to cool in the cake tin for 20 minutes, then run a blunt knife around the edge to release it from the tin.
Leave the cake to cool down to room temperature before slicing into portions.
