Sourdough Red Velvet Thumbprint Cookies
Rich, ruby and irresistibly festive, these sourdough thumbprint cookies bring all the charm of red velvet thumbprint cookies together with the subtle tang of sourdough. If you’re looking to add something extra to your sourdough Christmas cookies collection this season, these soft, delicate little treats are the perfect mix of nostalgia, colour and melt-in-the-mouth texture.
Ingredients
- 110 g unsalted butter softened
- 70 g icing sugar powdered sugar
- 60 g sourdough discard 100% hydration
- 1 teaspoon vanilla bean paste or vanilla extract
- ½ teaspoon salt
- 8 g cocoa powder unsweetened
- 140 g plain flour all-purpose flour
- ½ –1 teaspoon red gel food colouring
- granulated sugar for rolling (optional)
Filling
- 150 g full-fat cream cheese
- 40 g icing sugar powdered sugar
Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and icing sugar with an electric mixer until pale and fluffy.
- Add the sourdough discard, vanilla, salt, and red food colouring, then mix again until combined.
- In a separate bowl, whisk together the flour and cocoa powder.
- Add the dry ingredients to the butter mixture and mix gently until just combined — do not overmix.
- Scoop 1 tablespoon portions of dough and roll into smooth balls. Roll in granulated sugar if using.
- Press your thumb (or the handle end of a wooden spoon) into each dough ball to create a deep well.
- If the dough feels soft, chill the shaped cookies on the baking tray for 20 minutes.
- Bake for 10–12 minutes. If the wells puff up during baking, gently press them down again with a small spoon while the cookies are still hot.
- Transfer to a wire rack and cool completely.
- In a small bowl, beat the cream cheese and icing sugar until smooth.
- Pipe or spoon the filling into the cooled thumbprints. Keep chilled until serving.
