Homemade scones are one of life’s simplest pleasures, and this easy recipe for Cherry Scones might just become your new weekend favourite. Packed with tart cherries and sweet white chocolate chips, these Cherry White Chocolate Scones strike just the right balance between indulgent and comforting.
80gdouble creamheavy cream plus extra for brushing
1teaspoonvanilla bean pasteoptional
100gwhite chocolate chips
80gdried cherriesor glace cherries
Instructions
Preheat the oven to 190°C/375°F. Line a large baking sheet with parchment paper.
Combine flour, sugar, salt and baking powder in a large mixing bowl.
Coarsely grate the frozen butter into the dry ingredients and combine by rubbing the butter into the flour lightly, you want to keep some larger bits of butter in the dough.
Add the dried cherries and chocolate chips.
In a separate bowl, or a jug, lightly whisk the egg, vanilla bean paste and cream.
Pour this mixture into the dry ingredients and mix gently to combine. Mix gently just until the dough comes together—avoid kneading, as overworking the dough can make the scones tough. If it’s very dry, add a little more cream.
Tip the dough onto a lightly floured surface and gently bring it together into a mound using your hands.
Press the dough out with your fingers into a rough 20 cm (8-inch) circle.
Use a sharp knife or dough scraper to cut the dough into eight equal wedges or use a round 6.5 cm (2.5 inch) cookie cutter.
Transfer the scones to a lined baking sheet, spacing them slightly apart.
Brush the tops with cream or milk, then sprinkle over a little sugar.
Bake for 15 minutes, or until golden around the edges.
Transfer to a wire rack and let cool for 10 minutes before serving (they truly shine when still slightly warm).
Notes
*If you can, use caster sugar in scone dough, and coarse demerara sugar for topping.
