People call them granola bowls, yogurt parfait (fancy...), Berry Crunch Yogurt, but we simply call them Yogurt and Granola Pots! And we love them for a tasty healthy breakfast or a yummy snack in the office. Easy to make, this recipe uses a frozen berry compote, so you can enjoy them all year round, even when fresh berries are out of season! Creamy, crunchy, fruity and extremely easy to put together, this is one of our favorite recipes for a weekend breakfast!
Mix the frozen mixed berries, honey and water in a small saucepan and set it over medium heat. Once the berries thaw and release their juices, reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
The mixture should be slightly less thick than you would like it to be, as it will thicken more as it cools. Leave it to cool down completely at room temperature (you may then store the compote in the fridge or use it for granola pots).
Spoon a tablespoon of the frozen berry compote into the bottom of each glass. Top with two heaped tablespoon of yogurt. Then add a large tablespoon of berry compote again. Then 2 tablespoon of yoghurt. Top with a generous amount of granola and decorate with fresh berries and a sprig of mint if you wish.
Notes
*** The total time is based on making frozen berry compote from scratch (but it does not include the cooling time). If you make the compote in advance, Yogurt and Granola Pots will take under 10 minutes to put together.
