BLTA Sandwich (Bacon, Lettuce, Tomato & Avocado)

Ingredients
  

  • 10 rashers bacon approx 170g, smoked or unsmoked
  • 4 slices of bread
  • 1 ripe avocado large, half mashed, half sliced
  • 1 tomato large, sliced
  • 4-6 lettuce leaves
  • 2 heaped teaspoon mayonnaise

Instructions
 

  • Fry the bacon (or grill) until brown and crispy. Leave the rashers on a plate lined with paper towels to absorb excess fat.
  • In the meantime, mash half of the avocado with a fork. Mix in a little lemon or lime juice to prevent it from browning.
  • Spread it on half of the bread slices (you may choose to toast your bread if you intend to eat it immediately.
  • Place 5 bacon rashers on top of each slice with avocado spread.
  • Add the tomato slices, avocado slices and lettuce.
  • Spread a heaped teaspoon of mayo on the remaining bread slices and place them on top of the BLTA filling.
  • Press the sandwich down slightly, cut it in half and enjoy!
