Creamy Carrot and Sweet Potato Soup With Coconut Milk
This Sweet Potato and Carrot Soup With Coconut Milk is exactly the sort of soup I want when I need lunch to feel like more than just “hot orange liquid in a bowl”. It’s silky, warming, gently spiced and just interesting enough to stop it sliding into bland soup territory. If you’re after sweet potato and carrot soup with ginger, this one has enough zing, richness and personality to keep things very much alive.
2tablespoonroot gingerpeeled and finely chopped, optional
1tablespooncurry powder
600gcarrotspeeled and sliced
600gsweet potatoespeeled and cubed
500mlvegetable stock
400gtin coconut milkrich and creamy
½limejuice only
TOPPING SUGGESTIONS:
crispy chilli oil
roasted peanuts
crispy onion
fresh coriander (cilantro)
Instructions
Heat oil in a large pot over low-medium heat. Add the onions, and sauté for 3-4 minutes until starting to soften.
Add ginger, garlic and curry powder and stir for another minute.
Add the carrot and sweet potatoes, and mix to combine.
Reserve ~4 tablespoon of coconut milk for garnish. Add the rest of it to the soup pot. Pour the stock on top, and stir to combine.
Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, until the carrots and sweet potatoes are very tender.
Blend the soup in a liquidiser or by using an immersion blender until velvety smooth. If it's too thick, add a splash of hot water. Stir in the lime juice just before serving.
Divide the soup between bowls, swirl the reserved coconut milk on top and garnish with coriander, peanuts and crispy chilli oil.
