Not Your Average Soup
There are plenty of perfectly decent orange soups in the world to warm you up on a cold day. This one, however, has a little more going on.
The fresh ginger, garlic and curry powder give it warmth and depth without making it aggressively spicy. The full-fat coconut milk adds richness and that creamy texture that makes it feel more substantial than your average vegetable soup.
Then come the toppings - and honestly, they're not optional in spirit, even if technically they are. A swirl of coconut milk, crispy chilli oil, roasted peanuts and fresh coriander turn it from "nice enough" into a genuinely delicious soup you'd happily serve as a starter or a main.
It also happens to be vegan, naturally. No substitutions, no compromise, no suspicious "healthy version" energy - just a great recipe to keep handy.
Ingredient Notes
Here's what you'll need for this carrot and sweet potato soup:
- Carrots + sweet potatoes. A brilliant pairing. Carrots bring freshness and sweetness, while sweet potatoes add body and that lovely velvety finish. The sweetness of the sweet potatoes works especially well with the ginger and curry powder.
- Onion, garlic cloves and fresh ginger. These build the flavour base. If you like a gentler soup, you can reduce the ginger slightly, but I wouldn't skip it entirely.
- Curry powder. Gives warmth and complexity without needing a whole spice drawer thrown at it. Use your favourite blend.
- Vegetable stock / vegetable broth. A good veggie broth makes a noticeable difference here. If you're not keeping it vegan, chicken stock also works. As a rule of thumb, we prefer a stock pot over a stock cube.
- Full-fat coconut milk. This is what gives the soup its creamy soup energy. Light coconut milk will work, but the texture won't be quite as lush.
- Lime juice. Don't skip it. A little acidity right at the end lifts the whole thing and keeps the soup from tasting flat.
- Toppings. Crispy chilli oil, roasted peanuts, toasted pumpkin seeds, crispy onions and fresh cilantro (coriander) all bring contrast, crunch and actual joy.

Important Tips
- Cook the onions gently first. Starting on low heat gives you a sweeter, softer flavour base than rushing straight in on medium or high heat.
- Use full-fat coconut milk for the creamiest texture. It's the difference between "quite nice" and "I'd happily eat this three days in a row".

- Blend longer than you think. If you want truly smooth soups, give it an extra 20-30 seconds with a stick blender or good immersion blender. It makes a difference.


- Don't forget the lime juice at the end. This is what brightens everything up. Add it after blending, not before cooking.
- Top it properly. The soup itself is silky and mellow, so it really benefits from texture on top. Crunchy toppings aren't decorative nonsense here - they're structural.
- Adjust the thickness to your liking. Prefer a thinner soup? Add a splash of hot water or extra stock. Like a thicker puréed soup? Keep it exactly as it is.

Storage
Store cooled soup in an airtight container in the fridge for up to 3-4 days.
It also freezes very well. Freeze for up to 3 months, then defrost overnight in the fridge and reheat gently on the stove top. If it thickens after chilling, just loosen it with a splash of water or stock.

Creamy Carrot and Sweet Potato Soup With Coconut Milk
Equipment
- Large pot
- Immersion/ Stick/ Hand Blender or Liquidiser
Ingredients
- 1 tablespoon oil
- 1 brown/ yellow onion chopped
- 3 garlic cloves peeled and sliced
- 2 tablespoon root ginger peeled and finely chopped, optional
- 1 tablespoon curry powder
- 600 g (1.3 lb) carrots peeled and sliced
- 600 g (1.3 lb) sweet potatoes peeled and cubed
- 500 ml (2 cups) vegetable stock
- 400 g (14 oz) tin coconut milk rich and creamy
- ½ lime juice only
TOPPING SUGGESTIONS:
- crispy chilli oil
- roasted peanuts
- crispy onion
- fresh coriander (cilantro)
Instructions
- Heat oil in a large pot over low-medium heat. Add the onions, and sauté for 3-4 minutes until starting to soften.
- Add ginger, garlic and curry powder and stir for another minute.
- Add the carrot and sweet potatoes, and mix to combine.
- Reserve ~4 tablespoon of coconut milk for garnish. Add the rest of it to the soup pot. Pour the stock on top, and stir to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, until the carrots and sweet potatoes are very tender.
- Blend the soup in a liquidiser or by using an immersion blender until velvety smooth. If it's too thick, add a splash of hot water. Stir in the lime juice just before serving.
- Divide the soup between bowls, swirl the reserved coconut milk on top and garnish with coriander, peanuts and crispy chilli oil.
