Looking for something a little different for dinner? This Pistachio Crusted Cod is all about that golden, nutty crust — crunchy, zesty, and perfect for impressing guests or treating yourself on a special occasion. It’s easy enough for a weeknight, but fancy enough for your next dinner party.
4small cod filletsabout 100g/ 3.5oz each, thawed if frozen
60gshelled pistachiosunsalted
2tablespoon(15g) panko breadcrumbs
1heaped tbspgrated Parmesan
zest of 1 lemon+ 1 tablespoon juice
1tablespoonolive oil
½teaspoongarlic powder
salt & freshly ground black pepper
1tablespoonDijon mustardor mayonnaise
Instructions
Preheat oven to 200°C / 400°F.
Blitz pistachios in a food processor until coarsely ground (don’t overdo it—leave some texture).
Mix the pistachios in a bowl with panko breadcrumbs, Parmesan cheese, lemon zest and juice, garlic powder, olive oil and a good pinch of salt and black pepper.
Pat the cod fillets dry with paper towels.
Spread Dijon mustard (or mayo) on the top of each fillet—this helps the crust stick and adds flavour.
Press the pistachio mixture onto the mustard-coated side of the fish. Press firmly so it sticks.
Place the fillets on a lined or lightly oiled baking tray.
Bake for 12–15 minutes, depending on thickness, until the fish flakes easily and the crust is golden.
