    Pistachios: Not Only For Sweet Bakes

    While often seen in pastries and desserts, pistachios have a savoury side worth shouting about. Their naturally sweet, earthy flavour and subtle crunch make them a brilliant contrast to mild white fish, adding texture and richness without overpowering. 

    A pistachio crust brings nuttiness, colour, and even a boost of protein and healthy fats-proof that these little green gems deserve a spot on your dinner plate too.

    Ingredients and Substitutes

    Here's everything you will need for this Pistachio-Crusted Cod recipe: 

    • cod fillets: about 100g each. We used thawed, frozen Atlantic cod from ALDI, but fresh cod will work beautifully. 
    • shelled pistachios: unsalted, often labelled pistachio kernels. 
    • panko breadcrumbs: or regular breadcrumbs if that's what you have. 
    • Parmesan cheese: or Grana Padano, or other hard Italian cheese. 
    • lemon: unwaxed, since we will use lemon zest and freshly squeezed lemon juice. You may replace these with lime juice and zest.
    • extra virgin olive oil. 
    • garlic powder. 
    • fresh parsley: optional. 
    • salt & freshly ground black pepper. 
    • Dijon mustard: or mayonnaise or Greek yogurt.

    Step-By-Step Method

    1. Preheat oven to 200°C / 400°F.

    2. Prepare the crust mixture by blitzing pistachios in a food processor until coarsely ground (don't overdo it-leave some texture).

    3. Mix the pistachios in a small bowl with panko breadcrumbs, Parmesan cheese, lemon zest and juice, garlic powder, olive oil and a good pinch of salt and black pepper.

    4. Pat the cod fillets dry with a sheet of paper towel.

    5. Spread Dijon mustard (or mayo) on the top of each fillet-this helps the crust stick and adds flavour.

    6. Press the pistachio mixture onto the mustard-coated side of the fish. Press firmly so it sticks.

    7. Place the fillets on a parchment paper-lined or lightly oiled baking sheet.

    8. Bake for 12-15 minutes, depending on thickness, until the fish flakes easily and the crust is golden brown.

    Serving Suggestions

    This Pistachio Crusted Cod pairs beautifully with simple sides that let the nutty, zesty crust shine. Serve it with a scoop of white rice or ultra-smooth Food Mill Mashed Potatoes to keep things classic. Or try a side of our Roasted Fennel and Potatoes.

      This recipe for Pistachio Crusted Cod is exactly what I needed to add more fish into our diet on a regular basis. The recipe is so very simple and quick to prepare, is delicious, and presents beautifully! "Restaurant grade" according to my husband. The topping is so yummy that I'm going to find other ways to use it -- perhaps with more cheese on crostini as an appetizer.
      I've been cooking for family for over 50 years and often lack inspiration for dinner ideas. Thank you, Ieva, for providing this old dog with a delicious new trick!
