When the festive season is in full swing and unexpected guests arrive, this recipe for easy Puff Pastry Mince Pies will save the day! With just four ingredients and a quick prep time, you can whip up a batch of golden, flaky mincemeat pies in under 30 minutes. Perfect for this special time of year, they’re a stress-free treat that tastes as though you’ve spent hours in the kitchen.
Take your pastry out of the fridge (but not out of the packet) about 20-30 minutes before starting to bring it to room temperature (it will crack less when unrolling).
Unroll the pastry, leaving it on the paper it was rolled in.
Stamp out 12 circles, using an 8cm cookie cutter (most typical ready-rolled pastry sheets measure 38-24cm, so you should be able to get all 12 without re-rolling if you're frugal.
Line a 12-hole muffin tin with the pastry. If your tin is known to stick, grease it with butter first.
Place a heaped teaspoon of mincemeat into each pastry case (do not overfill, or your mincemeat will bubble over and stick to the tin, making it impossible to remove the pies).
Keep any diamond-shaped offcuts (see photos above), and reroll the rest of the pastry to cut small stars or hearts for the tops of the mince pies.
Place the shapes in the centre of the pies, and brush the tops with egg wash, or milk. Sprinkle with a little sugar.
Bake the puff pastry mince pies for 12-14 minutes, until golden brown.
Leave them in the tin for 10-15 minutes to firm up, then using a spoon scoop them out of the muffin tin, and cool down completely on a wire rack.
