5. Line a 12-hole muffin tin with the pastry. If your tin is known to stick, grease it with butter first.


6. Place a heaped teaspoon of mincemeat into each pastry case (do not overfill, or your mincemeat will bubble over and stick to the tin, making it impossible to remove the pies).
7. Keep any diamond-shaped offcuts (see photo below), and re-roll the rest of the pastry to cut small stars or hearts for the top of the pies. You can use a smaller cutter or simply a sharp knife.
8. Place the shapes in the centre of the pies, and brush the tops with a little beaten egg or milk, using a pastry brush. Sprinkle with a little sugar.
