A good Slow Cooker Chilli Con Carne is one of those meals that quietly does all the hard work for you while delivering big, bold flavour. It’s rich, comforting and deeply satisfying, but also incredibly simple to throw together. If you’ve ever wondered whether making chilli con carne in a slow cooker is worth it, the answer is yes and then some.
275mlbeef stockmade with 1 stock pot or stock cube
3tablespoontomato puréea.k.a. tomato paste in the US
400gtin kidney beansdrained
1red bell peppercut into bite-sized pieces
2teaspooncocoa powderunsweetened
To Serve:
ricesour cream, fresh coriander (cilantro) and lime wedges
Instructions
Fry the beef and onion in a large frying pan over medium-high heat for 5-6 minutes, stirring it often and breaking up clumps of meat as much as possible.
In a small bowl, mix the smoked paprika, cumin, coriander, chilli flakes, sugar, salt and black pepper. Add the spice blend to the beef, stir and cook for another minute.
Tip the browned beef mixture into the bowl of a slow cooker. Add the tin of tomatoes, tomato puree (tomato paste in the US), beef stock, drained kidney beans and red bell pepper.
Stir everything well, cover and cook on high setting for 4-5 hours, or low for 7-8 hours.
About 30-45 minutes before serving, stir in cocoa powder and continue cooking for the remainder of time.
Serve this slow cooker chilli con carne over white rice with a dollop of sour cream or cheese on top and a wedge of lime. Scatter some fresh herbs or spring onion (green onion on top).
