Here's everything you'll need for this easy slow cooker chilli recipe:
- Beef mince (ground beef). I like using around 10-12% fat for the best balance of flavour and texture. A slightly higher fat content gives you a richer result.
- Onion and garlic. Build the base flavour. You can use red onions or white onions interchangeably.
- Spices (paprika, cumin, coriander, chilli flakes or chilli powder). These create that classic rich flavour. If you want a shortcut, a good-quality taco seasoning works well.

Step-By-Step Method
1. Brown the beef. In a large frying pan over medium-high heat, cook the beef mince and onion for 5-6 minutes, breaking up the meat as it cooks.
2. Add spices. In a small bowl, mix the spices, then add them to the pan. Cook for 1 minute until fragrant.
3. Transfer to slow cooker. Tip everything into the slow cooker.
4. Add remaining ingredients. Stir in the chopped tomatoes, tomato purée, beef stock, kidney beans and bell pepper.




5. Slow cook. Cook on high heat for 4-5 hours or low for 7-8 hours.
6. Finish with cocoa. About 30-45 minutes before serving, stir in the cocoa powder and continue cooking.
7. Serve. Spoon over rice and finish with your favourite toppings.

Recipe Tips
- Brown the mince properly. This step adds flavour you cannot get later. Let it catch slightly at the bottom of the pan before stirring.
- Adjust spice to taste. Add extra chilli flakes or a pinch of cayenne pepper if you like heat.
- Use the right fat content. Too lean and the chilli can taste flat. A little fat goes a long way. But if you have super fatty beef, make sure to drain excess oil before adding the beef to the slow cooker.
- Let it sit before serving. Like most stews, it tastes even better after resting slightly.

- 400 g (14 oz) tin chopped tomatoes
- 275 ml (1⅛ cups) beef stock made with 1 stock pot or stock cube
- 3 tablespoon tomato purée a.k.a. tomato paste in the US
- 400 g (0z) tin kidney beans drained
- 1 red bell pepper cut into bite-sized pieces
- 2 teaspoon cocoa powder unsweetened
To Serve:
- rice sour cream, fresh coriander (cilantro) and lime wedges
Instructions
- Fry the beef and onion in a large frying pan over medium-high heat for 5-6 minutes, stirring it often and breaking up clumps of meat as much as possible.
- In a small bowl, mix the smoked paprika, cumin, coriander, chilli flakes, sugar, salt and black pepper. Add the spice blend to the beef, stir and cook for another minute.
- Tip the browned beef mixture into the bowl of a slow cooker. Add the tin of tomatoes, tomato puree (tomato paste in the US), beef stock, drained kidney beans and red bell pepper.
- Stir everything well, cover and cook on high setting for 4-5 hours, or low for 7-8 hours.
- About 30-45 minutes before serving, stir in cocoa powder and continue cooking for the remainder of time.
- Serve this slow cooker chilli con carne over white rice with a dollop of sour cream or cheese on top and a wedge of lime. Scatter some fresh herbs or spring onion (green onion on top).
