This recipe transforms simple pantry staples into a restaurant-quality Italian-inspired dinner, perfect for busy days when you crave comfort without the complicated steps.
1teaspoondried mixed herbslike basil, oregano and parsley
salt and black pepperto taste
3garlic clovesfinely chopped
100gsundried tomatoesin oil, drained and roughly chopped
250mlchicken stockdouble strength*, hot
Towards the End of Cooking:
150gspinach
100gcream cheesefull fat
50gparmesangrated
a small bunch of basilleaves roughly torn, stalks discarded
Instructions
Place the chicken pieces in a bowl of a slow cooker. Add a pinch of salt, black pepper, paprika dried herbs and flour. Toss to combine.
Add the garlic and sundried tomatoes.
Pour hot stock over the chicken, cover with the lid and cook for 2.5-3 hours on HIGH, or 5-6 hours on low.
Stir in the spinach and cook for another 15 minutes on high.
Finally, stir in the cream cheese, parmesan and basil and serve immediately.
Notes
* use twice the normal stock powder or cube concentration. For example, if the packet states "dissolve 1 stock cube in 500ml of water, you can use the whole cube in this recipe, but only add 250ml of water.
