    Tuscan Chicken, But Effortlessly Slow Cooked

    While traditional Tuscan chicken recipes often involve sautéing and stovetop simmering, the slow cooking process takes the pressure off completely. You simply add the ingredients, walk away, and come back to a juicy chicken dish that only needs a few touches to finish off the creamy sauce full of depth and flavour.

    The secret? A clever balance of sundried tomatoes, garlic, herbs, and just enough flour to help the sauce thicken naturally during cooking. You can use chicken breasts for a leaner, lighter option, or boneless skinless chicken thighs if you prefer a richer flavour and more forgiving texture for longer cooking on low heat. Either way, this slow cooker meal guarantees melt-in-your-mouth tenderness.

    Ingredients and Substitutes

    Chicken. We use chicken breasts, cut into bite-sized pieces for even cooking. For a more indulgent texture, swap for boneless skinless chicken thighs - they stay succulent even after 6 hours on low heat.

    Flour. A dusting of plain flour helps create that signature creamy Tuscan sauce. If you prefer, you can whisk cornflour (cornstarch) with a splash of chicken broth in a small bowl and stir it in towards the end of cooking instead.

    Sun-dried tomatoes. These add depth, sweetness, and colour. Use oil-packed ones, drained and chopped. If unavailable, cherry tomatoes make a good substitute for a fresher flavour.

    Spinach. Fresh baby spinach wilts beautifully into the sauce. If using frozen, thaw it first and squeeze out excess water.

    Creaminess. Instead of heavy cream, this recipe relies on cream cheese for a thick, tangy sauce that coats every morsel of chicken. You could also add a splash of cream or even leftover Alfredo sauce. If you have cream, try our Slow Cooker Creamy Lemon Chicken.

    Seasoning. A mix of Italian seasoning, paprika, salt, black pepper, and a pinch of red pepper flakes gives the dish its signature warmth and aroma.

    Parmesan cheese and a few basil leaves stirred in at the end add the perfect finishing touch.

    Tips for Best Results

    • Choose the right chicken for your schedule. If you're short on time, use chicken breasts and cook on high for about 2-3 hours. For longer days, chicken thighs are ideal - they stay juicy after 5-6 hours on low.
    • Why coat the chicken in flour. The flour helps thicken the sauce and gives the chicken a light coating that prevents it from drying out. For gluten-free diets, use cornstarch instead (but make sure to mix it with some cold water and add to the sauce about 30 minutes before the chicken is cooked).
    • Add spinach and cheese at the end. Stir in fresh spinach, cream cheese, and parmesan just before serving to preserve their texture and creaminess.

    Serving Suggestions

    Serve your Crockpot Tuscan Chicken over a bed of pasta, creamy mashed potatoes, or buttery rice to soak up every drop of that luscious sauce. For a lighter option, try it with green beans, courgettes, or a simple salad on the side.

    Cool leftovers completely before transferring to an airtight container. Refrigerate for up to 3 days, or freeze in a freezer-safe container for up to 3 months. Reheat gently on the stove top or in the microwave, adding a splash of stock or cream to loosen the sauce.

    Ingredients
     

    • 600 g (1.32 lb) chicken breasts cut into bite sized pieces
    • 2 tablespoon plain flour all-purpose flour
    • 1 tablespoon paprika
    • 1 teaspoon dried mixed herbs like basil, oregano and parsley
    • salt and black pepper to taste
    • 3 garlic cloves finely chopped
    • 100 g (3.53 oz) sundried tomatoes in oil, drained and roughly chopped
    • 250 ml (1 cup) chicken stock double strength*, hot

    Towards the End of Cooking:

    • 150 g (5.29 oz) spinach
    • 100 g (3.53 oz) cream cheese full fat
    • 50 g (2 oz) parmesan grated
    • a small bunch of basil leaves roughly torn, stalks discarded

    Instructions
     

    • Place the chicken pieces in a bowl of a slow cooker. Add a pinch of salt, black pepper, paprika dried herbs and flour. Toss to combine.
    • Add the garlic and sundried tomatoes.
    • Pour hot stock over the chicken, cover with the lid and cook for 2.5-3 hours on HIGH, or 5-6 hours on low.
    • Stir in the spinach and cook for another 15 minutes on high.
    • Finally, stir in the cream cheese, parmesan and basil and serve immediately.

    Notes

    * use twice the normal stock powder or cube concentration. For example, if the packet states "dissolve 1 stock cube in 500ml of water, you can use the whole cube in this recipe, but only add 250ml of water.

      This was so delicious and also very quick to make. Lovely creamy tasty meal and addition of spinach made it extra healthy. We had it with butter bean mash.
