Introducing our autumnal Sweet Potato Porridge recipe! This morning bowl is a cosy blend of creamy sweet potato puree, hearty oats, a sprinkle of warming spices, and a drizzle of maple syrup. Topped with crunchy toasted pecan nuts, it's the perfect way to start your day with a smile.
1teaspoonpumpkin spice or mixed spiceor ⅓ teaspoon of each cinnamon, nutmeg and ginger

20gtoasted pecansroughly chopped
Instructions
The night before, make your sweet potato puree (see notes). Alternatively, use shop-bought puree.
Place oats, milk, spices and half of the maple syrup into a saucepan and heat for 5-8 minutes until it thickens bus is looser than you would like (sweet potatoes will thicken it further).
Stir in the sweet potato puree and cook just enough to warm through. Add a splash of milk if your porridge turns too thick.
Divide sweet potato porridge between bowls and top with toasted pecan nuts, a dollop of yogurt and drizzle with the remaining maple syrup.
Notes
You can use canned sweet potato puree or pureed sweet potato from the baby food aisles. Alternatively, make the puree at home:
Boil Method:
Peel and chop the sweet potatoes into chunks.
Place them in a pot, cover with water, and boil on medium heat until tender (about 15-20 minutes).
Drain, then mash or blend until smooth. Use a little of the cooking water to adjust consistency.
Steam Method:
Peel and chop the sweet potatoes into chunks.
Steam them in a steamer basket or microwave until they are easily pierced with a fork (usually 15-20 minutes on the stovetop or 5-7 minutes in the microwave).
Mash or blend the steamed sweet potatoes until you achieve the desired texture.
Roast Method:
Preheat your oven to 400°F (200°C).
Toss them with a little bit of oil
Roast them on a baking tray for 45-60 minutes or until they are soft.
Scoop the flesh out of the cooked potatoes and mash to create a flavorful puree.
