    When the whirlwind of Christmas Day settles, there's nothing more comforting than a delicious meal that feels fresh, light, and still festive. This Christmas Caesar Salad takes everything we love about a classic Caesar - creamy dressing, crunchy croutons, shaved Parmesan cheese - and gives it a seasonal twist using leftover turkey, shaved Brussels sprouts, and those little Christmas odds and ends we always seem to have in the fridge. It's the kind of dish that tastes indulgent yet refreshing, making it the perfect Leftover Turkey Caesar Salad for Boxing Day or any relaxed holiday lunch.

    Good Use For Christmas Leftovers

    If your fridge looks like mine after Christmas dinner - overloaded with remaining sprouts, turkey trimmings, and half-loaves of bread - this salad is a lifesaver. It's a clever way to repurpose leftovers into something vibrant and fresh, especially when you crave a lighter meal after the richness of the holiday feast. 

    Shaved Brussels sprouts add crunch, turkey makes it satisfying, and homemade dressing brings it all together into a salad worthy of a dinner party, but just as fitting for eating out of a bowl while watching Christmas movies. Truly one of the easiest Christmas salads you can put together when you're keeping things simple.

    Ingredient Notes

    • Stale bread. Torn into bite-size pieces, it makes the best fresh croutons. If the bread is soft, leave it out for 30 minutes to dry slightly. Or make our favourite - Sourdough Croutons!
    • Olive oil. Helps the croutons turn golden brown in the oven.
    • Garlic clove. Fresh adds lovely aroma, though garlic powder is fine for a gentler flavour.
    • Mayonnaise. The base of your creamy dressing. Avoid light mayo for the best texture.
    • Parmesan. Finely grated for the dressing, shaved for serving. Use proper Parmigiano-Reggiano or Grana Padano.
    • Lemon juice. Adds brightness and cuts through richness.
    • Dijon mustard. Essential for tang.
    • Worcestershire sauce. The umami backbone of a good Caesar.
    • Milk. Helps loosen the dressing to a pourable consistency.
    • Salt & black pepper. Season to taste.
    • Pancetta or leftover ham. Pancetta adds crispiness; ham is perfect if you're using what's already in the fridge.
    • Leftover turkey. White or dark meat both work beautifully.
    • Brussels sprouts. Shaved thinly for crunch; use a food processor with slicing attachment or a very sharp thin-bladed knife. 
    • Gem lettuce. You can also use crisp romaine lettuce or iceberg lettuce.
    • Dried cranberries. Adds sweetness and festive flair.

    Variations and Extras

    This is the kind of salad that evolves with whatever Christmas leftovers you have:

    • Roasted carrots or parsnips. Chop into small pieces and mix through for warmth and sweetness.
    • Roast potatoes. Re-crisp in a pan and use instead of croutons for a quirky twist.

    • Roasted chickpeas. A great option if you're feeding vegetarians or want extra texture.
    • Leftover stuffing. Crumble small amounts through the salad for herby pops of flavour.
    • Bacon instead of pancetta. Works perfectly.
    • Vegan Caesar dressing. Swap the mayo for plant-based mayo and the Parmesan for nutritional yeast if you need a dairy-free version.

    Step-By-Step Method

    1. Make the Croutons: Toss the torn bread with olive oil, garlic, salt, and black pepper. Spread onto a large baking sheet and bake at 190°C (375°F) for 10-12 minutes until crisp and golden.

    2. Make the Caesar Dressing: In a small bowl, whisk together mayonnaise, grated Parmesan, lemon juice, Dijon mustard, garlic powder, milk, Worcestershire sauce, and salt. Taste and adjust.     3. Cook the Pancetta: Fry the pancetta over medium heat until crisp. Drain on paper towels.

    4. Assemble the Salad: In a large mixing bowl, add shaved Brussels sprouts and chopped lettuce. Add leftover turkey, pancetta, and dried cranberries.

    Drizzle in the dressing slowly-only as much as you need-and toss until everything is lightly coated. Mix through half the shaved Parmesan and finish with the rest on top. 

    Storage

    This Christmas Caesar Salad is at its best when enjoyed fresh, but you can store components separately to keep everything crisp. Place the leftover turkey, shaved Brussels sprouts, and lettuce in an airtight container, keeping the homemade dressing in a small bowl or jar on the side. Avoid mixing the salad ahead of time-once dressed, the greens will wilt quickly and lose that lovely crunch.

    If you've already tossed everything together, store the leftovers in the fridge and enjoy within a day or two. The flavours are still delicious, though the texture softens slightly (a great option for those who prefer a good salad without too much crunch). Keep any crunchy croutons in a zip-top bag at room temperature so they stay crisp, then scatter them on top just before serving.

    Ingredients
     

    For the Croutons

    • 120 g (4.23 oz) stale bread torn into rough chunks
    • 2 tablespoon olive oil
    • 1 garlic clove minced
    • salt & black pepper to taste

    For Caesar Dressing

    • 70 g (⅓ cup) mayonnaise
    • 20 g (¼ cup) parmesan very finely grated
    • 1½ tablespoon lemon juice
    • 1 tablespoon Dijon mustard
    • ½ teaspoon garlic powder
    • 1½ tablespoon milk
    • 1 teaspoon Worcestershire sauce
    • ¼ teaspoon salt

    For Christmas Leftover Salad

    • 100 g (3.53 oz) pancetta or leftover cooked ham
    • 300 g (10.58 oz) cooked turkey shredded or cubed
    • 250 g (8.82 oz) Brussels sprouts trimmed and shaved
    • 1 (approx 400g/ 14oz) gem lettuce shredded
    • 20 g (0.71 oz) Parmesan shaved
    • 20 g (2-3 tablespoon) dried cranberries roughly chopped

    Instructions
     

    Make Croutons

    • Preheat oven to 190°C (375°F).
    • Toss the torn bread with olive oil, minced garlic, salt, and pepper.
    • Spread on a tray and bake for 10-12 minutes, or until golden and crisp.

    Make the Dressing

    • Place all the dressing ingredients in a bowl and whisk for 30-60 seconds until the salt dissolves and the ingredients are fully combined. Taste and adjust the seasoning if needed.

    Assemble Salad

    • Fry the pancetta until crispy and brown (or cube leftover cooked ham).
    • Place shaved Brussels sprouts and lettuce in a large mixing bowl.
    • Add the shredded or cubed leftover turkey, crispy pancetta and cranberries.
    • Add your Caesar dressing gradually - you may not need it all depending on your preferences.
    • Toss until everything is well coated.
    • Add half the Parmesan and mix through.
    • Top with warm croutons and the remaining Parmesan.
    • Finish with freshly cracked black pepper.
