This trendy Hawaiian dish-traditionally made with raw fish (the reason why it's sometimes called a sushi bowl) - has evolved into the ultimate customizable rice bowl, now found in almost every supermarket fridge right next to the pre-packed sandwiches.
The best part? You can easily make your own at home with fresh ingredients, bold flavours, and endless topping options that'll never bore your taste buds.
Today, we're sharing one of our favourite poke bowl recipes that will please the whole family, made with teriyaki chicken instead of fish! And if you love chicken, you should also try our Chicken Katsu Poke Bowl.

Ingredients and Substitutes
Here's everything you'll need for these Chicken Teriyaki Bowls, but feel free to experiment with the veggie toppings! Don't be put off by the long ingredients list - you will likely have most of the things in your cupboards, or will be able to make substitutions.
Seasoned Rice Base
- sushi rice: if you don't have any, serve all the toppings with brown rice or white rice (it's still tasty!)
- seasoning: rice vinegar, white sugar and salt.
Pickled Onions
- red onion.
- rice vinegar.
- white sugar: caster or granulated.
- a pinch of salt and black pepper.
Sesame Mayo Drizzle
- mayonnaise: we highly recommend Kewpie mayonnaise.
- toasted sesame oil.
Teriyaki Chicken
- chicken breast: you will need one large or two small chicken breasts to serve two. You can also use skinless, boneless chicken thighs, but note that they will take longer to cook. You can also use tofu or salmon (like we do in our Teriyaki Tofu Poke Bowl and Teriyaki Salmon Poke Bowl recipes).
- teriyaki sauce: we used shop-bought, but you can easily make your own sauce.
Toppings
- edamame beans: we cooked ours from frozen.
- fresh veggies: carrot, bell pepper, Persian cucumber, but you can use whatever you have in the fridge.
- pineapple: fresh or from a tin, cut into chunks (or try our Cucumber Pineapple Salad as a topping instead). Mango goes very well too.
- sesame seeds.

OTHER TOPPING SUGGESTIONS: We often top these teriyaki chicken poke bowls with thinly sliced spring onions (a.k.a. green onion) instead of pickled red onion. We also love adding sliced radishes, mange tout, shredded red cabbage and avocado. Mix and match - that's one of the best things about a poke bowl!
Step-By-Step Method
Let's jump into all the details on how to make this delicious poke bowl!
Step 1: Cook Sushi Rice
1. Cook the rice following the package instructions, but as a general rule of thumb, place the rice in a colander and rinse, mixing the rice, under cold water until the water runs clear. Leave the rice to soak in water for 15 minutes. Drain thoroughly.
2. Add the drained rice to a pot with 220 ml of cold water and cover with a lid. Bring it to a boil, then simmer on low heat for 10 minutes. (lid on).
3. Take the pot of rice off the heat and leave it undisturbed (keeping the lid on) for 10 minutes.
4. In a small bowl, combine vinegar, sugar and salt. When the rice is cooked and rested, stir in the vinegar mixture, mixing it with a wooden spoon.



Step 2: Pickle Red Onion
1. In the meantime, boil a whole kettle of water.
2. Place the thinly sliced red onion in a colander. Slowly pour boiling water over the onion in the sink - this removes the ferocious raw onion flavour.
3. Place the drained onion in a small bowl with rice vinegar, sugar, a pinch of salt and black pepper. Mix well and set aside.



Step 3: Make Sesame Mayo Drizzle
1. In a small bowl, mix the mayonnaise, sesame oil and 1-3 tablespoon of water (you want it drizzleable consistency).
TIP: To make spicy mayo, stir in 1 teaspoon of sriracha sauce.

Step 4: Cook Teriyaki Chicken
1. Cut your chicken in half lengthwise to create two thin slices. Heat a drop of olive oil in a large frying pan over medium heat. Add the chicken and cook it for 3-4 minutes on each side (cooking time will depend on the thickness of your chicken breast) until cooked through.
2. Mix the teriyaki sauce and 2 tablespoon of water in a small bowl and add it to the pan. Cook for another minute, spooning the sauce over the chicken breast steaks. Take the cooked chicken out of the pan and onto a chopping board, and slice them into thin strips.



ALTERNATIVELY: Stir fry cubed chicken in a pan, then add the teriyaki sauce at the end.
Step 5: Assemble Teriyaki Chicken Poke Bowls
1. Divide the seasoned sticky rice between bowls. Top it with drained pickled red onions, pineapple chunks, edamame beans, julienned carrots and sliced bell peppers (or any fresh vegetables you may have in your fridge).
2. Place a sliced juicy chicken breast on top, spooning any leftover teriyaki sauce from the pan on the chicken.
3. Drizzle everything with sesame mayo and scatter some sesame seeds on top. Enjoy!

Storage and Making Ahead
These teriyaki poke bowls are a great way to get ahead on your meal prep! For best results, store each component - rice, veggies, sauce, and leftover chicken - in separate airtight containers in the fridge for up to 3 days.
You can also store the bowl fully assembled if you're short on time (after all, we buy ready-made poke bowls fully assembled and cold from the fridge in the shops). Pack it for a perfect lunch that you will look forward to!
You can also reheat the chicken. Place it in a small pan with a splash of water, cover with a lid, and warm through for a couple of minutes until hot.
