For Sourdough Batter
- 45 g (¼ cup) plain flour all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ⅛ teaspoon turmeric
- a generous pinch of salt
- 100 g (⅓ cups) sourdough discard, 100% hydration
- 90-100 ml (¼ cups) cold sparkling or still water, or beer
Other Ingredients:
- 1 large onion sliced into rings
- 3-4 tablespoon flour for coating onion rings
- neutral oil for frying
- 60 g panko breadcrumbs
Instructions
- Lay the onion rings in a single layer on a few sheets of paper towel and pat dry from the top to remove excess moisture.
- In a small bowl, mix the flour, baking powder, garlic powder, paprika, and turmeric. Season with a pinch of salt and black pepper.
- In a separate bowl, whisk together the sourdough discard and 90 ml of cold sparkling water.
- Add the dry mix into the discard mixture and stir until fully combined.
- Heat about 1-2 cm of neutral oil in a frying pan over medium-high heat. It should reach 180°C-190°C (350°F-370°F).
- Place the flour for the coating in a shallow bowl.
