This quick, easy recipe combines crisp cucumber with juicy pineapple for a tropical taste that works beautifully as a refreshing side on a hot day. It's proof that the right mix of sweet flavours, tangy dressing, and fresh herbs can go a long way. Perfect for that time of year when your vegetable patch is overflowing with garden cucumbers.

    Ingredients and Substitutes

    • Pineapple chunks. Tinned pineapple in fruit juice keeps things quick, but if you have a ripe pineapple on hand, it'll add even more tanginess and sweetness of the pineapple and a fresh, bright aroma.
    • Fresh cucumber. Short garden cucumbers or Persian cucumbers are the best choices for a crisp cucumber texture without too many seeds. If you use regular cucumbers (like an English cucumber), scrape out the seedy core. 
    • Red onion. Adds a subtle bite; if you prefer something milder, soak the chopped onion in cold water for 5 minutes before using.
    • Red chilli. For a bit of heat, or swap it for red pepper flakes if you want a gentler warmth.
    • Dressing. A mix of olive oil, fresh lime juice, lime zest, and honey balances sweet and tangy flavours. You can replace honey with maple syrup.

    Step-By-Step Method

    Step 1 - Place diced pineapple, cucumber, red onion, and chilli pepper in a large bowl. For the best flavour, cut everything into smaller pieces so each bite has a good mix of ingredients.

    Step 2 - Zest the lime over the salad (TIP: zest before juicing for easier handling).

    Step 3 - In a small jar, combine fresh lime juice, clear honey, olive oil, and a pinch of salt and pepper. Shake.

    Step 4 - Pour the dressing over the salad and toss gently. Serve straight away to enjoy the crisp cucumber and sweet pineapple at their best.

    Variations

    • Use fresh pineapple instead. 
    • Skip the chilli and use hot honey in the dressing for sweetness with a gentle kick.
    • Add herbs like fresh mint or fresh cilantro (coriander) for an extra pop of freshness.
    • Stir in avocado cubes, cucamelons, or red bell pepper for extra crunch and colour.
    • Mix a teaspoon of poppy seeds into the dressing for added texture and visual appeal.

    Serving Suggestions

    This spicy pineapple cucumber salad recipe pairs beautifully with grilled fish, shrimp kabobs, or even roast chicken for a summer recipe that feels light but satisfying. It's also a perfect side for summer potlucks or a backyard BBQ, adding a refreshing contrast to smoky mains. 

    For something more unusual, serve it as a topping for fish tacos, or spooned over rice noodles or poke bowls for a tropical twist.

    Storage

    This salad is best eaten fresh to keep that crunchy cucumber texture, but you can store leftover salad in an airtight container in the fridge for up to 2-3 days. The pineapple salad dressing will soften the vegetables over time, so keep the dressing separate if making ahead.

    Ingredients
     

    • 340 g (12 oz) tin pineapple chunks (drained weight) in fruit juices, not syrup, diced
    • 500 g (1.1 lb) cucumber diced
    • 1 red onion finely chopped
    • 1 red chilli finely chopped

    Dressing:

    • 1 lime zest and juice
    • 1-2 teaspoon clear honey
    • 2 tablespoon olive oil

    Instructions
     

    • Place the diced pineapple, cucumber, red onion and chilli in a large mixing bowl.
    • Zest the lime and scatter the zest all over the salad.
    • To make the dressing, place the lime juice, honey, olive oil and a pinch of salt and pepper in a small jar. Screw the lid on and shake vigorously for a few seconds to combine.
    • Pour the dressing over the salad and toss to combine.
    • Serve immediately!
