    Ingredients
     

    • 1 kohlrabi small, peeled and julienned
    • 1 apple cored and julienned
    • 40 g (2 cups) baby leaves like spinach or lamb's lettuce
    • 30 g (¼ cups) walnuts roughly chopped

    Dressing:

    • 1 teaspoon lemon juice
    • 1 tablespoon mayo
    • 1 teaspoon Dijon mustard
    • 1 tablespoon water
    • salt and black pepper

    Instructions
     

    • Whisk the mayo, mustard and lemon juice in a small bowl. Add water and stir to loosen to the desired consistency. Season with salt and pepper.
    • Lightly toast the walnuts in a dry pan.
    • To a large bowl, add kohlrabi, apples, baby leaves and toasted walnuts.
    • Toss the salad with the dressing and serve immediately.
