Simple Greek Salad With Milder Flavours
Think of this as a gentler version of the classic Greek salad - we keep the sweet flavour of cherry tomatoes, the tangy feta cheese, and the fresh herbs, but skip the briny olives and sharp bite of raw red onion.
It's perfect for those who love Mediterranean flavour but prefer a milder, more balanced taste. The balsamic dressing adds just the right amount of tangy flavour without overpowering the fresh produce.
Ingredient Notes
- Cucumbers. For best flavour and texture, use English cucumbers or Persian cucumbers with a thin skin and fewer seeds.
- Tomatoes. Cherry tomatoes or grape tomatoes work beautifully for a sweet flavour and minimal mess. If using larger fresh tomatoes (such as Roma or Heirloom tomatoes), cut into bite-sized pieces and remove excess liquid for the best flavour.
- Feta cheese. Use creamy feta cheese in blocks and crumble it yourself for the best texture. Tangy feta cheese made from sheep's milk will give you a richer taste than cow's milk varieties.

Have Overgrown Garden Cucumbers?
If you've just come back from holiday and found a few overgrown cucumbers in the garden (we certainly have!), here's the best way to prepare them.
Large cucumbers with dark green skin often have thicker skins and more seeds. For a fresher texture, partially peel the skin and slice the cucumber lengthwise. Use a spoon to scrape out the watery cores and remove most of the seeds.

While this isn't much of a problem if you're serving this simple salad right away, the extra water from the seeds can dilute the dressing if you're storing it in the fridge for later.
Storage
This salad is best enjoyed at room temperature shortly after making it, but you can store leftovers in an airtight container in the fridge for up to 2 days. If making ahead, keep the dressing separate and toss just before serving for the best texture.

Cucumber, Tomato and Feta Salad
Ingredients
- 400 g (0.88 lb) cucumbers* sliced in semi-circles or cubed
- 300 g (2 cups) cherry tomatoes halved
- 150 g (6 oz) feta cheese crumbled
- 15 g (½ cup) basil leaves roughly chopped
Balsamic Dressing:
- 2 tablespoon balsamic vinegar
- 2 tablespoon extra virgin olive oil
- 1 garlic clove minced
- salt and black pepper
Instructions
- Place cucumber, tomatoes, basil and most of the feta in a large mixing bowl (reserve some feta for scattering on top).
- To a small jar, add the balsamic vinegar, olive oil, minced garlic clove and a pinch of salt and pepper. Screw the lid on and shake the jar for a few seconds to combine.
- Pour the dressing over the salad and toss gently to avoid breaking up the feta.
- Scatter the remaining feta cheese on top and serve!
