    Indian Flavoured Crispy Chicken 

    This dish combines the comforting crunch of panko breadcrumbs and desiccated coconut with gentle warmth from curry powder - a subtle nod to classic Indian flavours. The coconut crust not only adds texture but also brings a natural sweetness that balances beautifully with the tang of mango chutney and a hint of savoury spice.

    It's an easy way to make a restaurant-quality meal at home. You start by brushing the chicken with a quick mixture of mango chutney and mayonnaise (this acts as both flavour and glue), then pressing it into a fragrant coconut mixture. The fillets bake in a single layer on a baking sheet until the tops turn golden brown and the kitchen smells like sunshine.

    Tips & Variations

    • Choose the right chicken: Slice large chicken breasts in half lengthways to create thinner pieces - this helps them cook evenly and stay juicy.
    • Check the internal temperature: For perfectly cooked chicken, aim for 74°C (165°F). A meat thermometer takes the guesswork out of it.
    • No desiccated coconut? You can use unsweetened coconut flakes or shredded coconut - just pulse them in a food processor for a finer texture that sticks better.
    • Change up the flavours: Swap curry powder for garlic powder, onion powder, or a pinch of cumin for a deeper, savoury flavour. A little lime zest or lime juice in the coating brightens everything up.

    Storage and Reheating

    Leftovers keep well in an airtight container in the fridge for up to 2 days. To reheat, place the chicken on a baking sheet and warm in a preheated oven at 180°C for 8-10 minutes to bring the crunch back (avoid the microwave unless you're not fussed about the crispiness).

    If you plan to make extra for lunchboxes, reheat gently and serve sliced over salad or tucked into wraps with lettuce, a spoonful of mango chutney, and a squeeze of lime.

    Ingredients
     

    • 1 large chicken breast about 250-300 g, sliced in half lengthways to make 2 thinner fillets
    • 1 tablespoon mango chutney
    • 1 tablespoon mayonnaise
    • 15 g (2 tablespoon) desiccated coconut
    • 15 g (2 tablespoon) panko breadcrumbs
    • 1 teaspoon mild curry powder
    • 1 lime zest of 1 lime + 1 tablespoon of lime juice
    • 1 tablespoon olive oil or melted butter
    • salt and freshly ground black pepper to taste
    • fresh coriander or lime wedges to serve (optional)

    Instructions
     

    • Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and lightly brush or spray it with oil.
    • In a shallow bowl, mix together the desiccated coconut, panko breadcrumbs, curry powder, lime zest, a pinch of salt, and black pepper. Drizzle in the olive oil (or melted butter) and lime juice, and toss to coat - this helps the crust turn golden and crisp in the oven.
    • In a small bowl, stir together the mango chutney and mayonnaise. This will act as both a flavour layer and the "glue" for the coconut coating.
    • Pat the chicken fillets dry with paper towels and season both sides lightly with salt and pepper. Place them on the prepared tray, then spread the mango chutney mixture evenly over the top of each fillet.
    • Press the coconut and breadcrumb mixture firmly onto the top of each chicken piece. The mango chutney mayo layer will help it stick.
    • Place the tray in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the chicken is cooked through (internal temperature should reach 74°C / 165°F).
    • Allow the chicken to rest for a couple of minutes, then serve with a squeeze of lime and a sprinkle of fresh coriander.
