    Crusted Fish: Easy Way to Elevate Dinner

    There's something magical about the contrast between a soft, flaky piece of fish and a crunchy, flavour-packed crust. A simple coating of breadcrumbs and shredded coconut turns ordinary white fish into a restaurant-quality meal. It's the kind of dish that looks impressive but comes together in minutes - ideal for busy evenings or when you want a lighter alternative to fried fish.

    You can easily experiment with different coatings too. Try a pecan-crusted cod for nutty depth, or almond-crusted salmon if you prefer richer, buttery flavours. Each variation brings a new texture and twist - proof that baked fish never needs to be boring.

    Ingredients and Substitutes

    Cod fillets: Use fresh cod fillets if you can, but frozen ones from the frozen aisles work perfectly too - just defrost them fully and pat dry with a paper towel to remove any excess moisture. This prevents too much steam in the oven and gives that signature crispy coconut coating. You can also use haddock, pollock, or any mild white fish instead.

    Mayonnaise: Whole egg mayo or reduced-fat mayonnaise will work.

    Mango Chutney: Use smooth mango chutney, or at least avoid large chunks of mango in your chutney.

    Panko breadcrumbs: These create a light, crunchy texture. Regular unseasoned breadcrumbs or favourite gluten-free crumbs will also work. 

    Desiccated coconut: Use unsweetened coconut or lightly toasted coconut for the best balance of flavour. Sweetened coconut can overpower the savoury crust.

    Curry powder: Adds warmth and colour. Replace with a homemade blend - ½ teaspoon cumin, ¼ teaspoon paprika, and ¼ teaspoon turmeric - for a similar depth of flavour. A pinch of chilli powder gives a gentle kick, and a little garlic powder wouldn't go amiss either. 

    Lime zest and juice: Brings brightness and cuts through the richness of the coconut. 

    Olive oil: Aids a lovely golden brown finish.

    Recipe Tips for Best Results

    • Pat the fish dry: Always dab your fish fillets with a paper towel before spreading the mayonnaise mixture. This helps the coconut breadcrumb coating cling better and prevents too much steam in the oven.
    • Adjust cooking time: Depending on the thickness of your pieces of cod, the baking time may vary slightly. The internal temperature should reach 63°C (145°F).
    • Alternative crust application: Skip the mayo mixture, and dip the cod fillets in a lightly beaten egg. Then roll the fish in the coconut mixture and fry in neutral oil in a frying pan.
    • Space them out: Leave gaps between the fish fillets on a baking sheet to prevent them from cooking in each other's steam rather than crisping up. 

    Serving Suggestions

    This coconut-crusted fish is incredibly versatile. For sides, think fresh and light to balance the richness of the coconut crust. It's wonderful with tenderstem broccoli, roasted carrots, or a courgette ribbon salad dressed in lemon juice and olive oil.

    For something tropical, pair it with coconut rice and a refreshing mango salsa or cucumber and pineapple salsa. The delicious sweetness of the fruit complements the savoury crust beautifully. If you prefer something more classic, a dollop of favourite dipping sauce - like sweet chilli, garlic yoghurt, or zesty tartar - works perfectly.

    And if you have leftovers? Flake the fish and tuck it into fish tacos with a spoonful of simple mango salsa and a sprinkle of fresh cilantro (coriander). A great way to turn one dinner into another the next day.

    Ingredients
     

    • 4 cod fillets about 100g each
    • 1 tablespoon mayonnaise
    • 1 tablespoon mango chutney
    • 1½ tablespoon (20 g) panko breadcrumbs
    • 1½ tablespoon (20 g) desiccated coconut unsweetened
    • ½ teaspoon salt
    • 1 teaspoon mild curry powder
    • zest of 1 lime + 1 tablespoon lime juice
    • 2 tablespoon olive oil

    Instructions
     

    • Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
    • In a small bowl, combine the mayonnaise and mango chutney.
    • In a shallow bowl, combine the panko breadcrumbs, desiccated coconut, lime zest, salt and curry powder. Add the lime juice and oil and mix well.
    • Pat the cod dry with paper towels. Place the fillets spaced apart on the prepared baking tray (prevents steaming instead of crisping).
    • Spread a thin layer of the mayonnaise mixture on top of each cod fillet.
    • Spread spoonfuls of coconut crumb mixture on each fillet, pressing the crumbs down with the back of the spoon across the top.
    • Bake the fish for 13-16 minutes, depending on the thickness of the fish (internal temperature should reach 63°C (145°F).
    • Serve coconut crusted cod with your favourite side dishes and sauces!
