    If there's one bowl that can brighten even the greyest winter afternoon, it's this creamy Parsnip and Carrot Soup. Sweet root vegetables, gentle curry warmth and coconut richness come together in a silky blend that tastes far more luxurious than its budget-friendly ingredients suggest.

    Inexpensive Soup To Warm Up With

    This is the perfect cheap soup for colder months: simple ingredients, big flavour, and very little hands-on work. Parsnips and carrots are inexpensive, store well through winter, and transform into a deeply comforting soup with natural sweetness and a hint of subtle spice from curry powder and ginger.

    It's also nutritious, filling and adaptable - ideal for healthy eating on busy days. A great way to warm up without turning to heavy meals.

    Ingredient Notes

    Here's what you'll need for this simple carrot parsnip soup:

    • Carrots & parsnips: Any size works, but larger parsnips may have a woody core-trim it if needed. A mixture of these root vegetables gives sweetness, body and vibrant colour.
    • Onion & garlic cloves: A chopped onion and a few garlic cloves create depth. Yellow, brown or white onions all work well.
    • Fresh ginger (optional): Adds a warming kick. Swap for ground ginger if that's what you have.
    • Curry powder: Mild or medium works beautifully. Use your favourite spice blend or mix your own with ground spices like cumin, coriander and turmeric.
    • Vegetable stock / broth: Use a good vegetable stock or a high-quality stock cube dissolved in hot water. Chicken stock also works for a non-vegetarian soup.
    • Coconut milk: Choose full-fat coconut milk for a creamy texture. Light coconut milk results in a thinner consistency and a lot less coconut flavour.
    • Lime juice: Brightens everything at the end. Lemon juice is a fine substitute. You'll need a pinch of salt and black pepper to adjust the seasoning too.

    Tips For Best Results

    • Sauté gently. Start the yellow onion over medium heat with a little olive oil until soft but not browned. This gives a sweeter, rounder base to your soup.
    • Use full-fat coconut milk. This makes all the difference in achieving a velvet-smooth creamy soup with full flavour.
    • Let the vegetables soften fully. The parsnip pieces and carrot slices should be very tender before blending. This gives the creamiest finish without adding cream.
    • Blend longer than you think. Whether you use an immersion blender, stick blender, or a regular blender, keep going for a few extra seconds. A high-speed blender gives the silkiest texture.
    • Adjust thickness. Add a splash of hot water or more stock for a thinner consistency-handy when reheating the next day.
    • Layer the spice. If you enjoy spicy carrot and parsnip soup, add chilli flakes, a pinch of cayenne, or extra curry powder.

    Serving Suggestions

    This tasty soup is lovely on its own, but toppings truly elevate it. Drizzle with the reserved coconut milk, swirl over chilli crisp, or scatter roasted peanuts for crunch. A handful of fresh herbs or green onion, crispy onions (or crispy shallots) or toasted seeds adds a lovely texture contrast.

    For a truly comforting meal, pair the soup with crusty bread, naan, cheese toasties or simple garlic bread (hint: garlic butter sourdough focaccia is the best!). It's also delicious served with a winter salad, baked sweet potatoes, or even spooned into a mug for an easy lunch.

    If you're after a more filling meal, stir cooked red lentils through the blended soup. They melt into the base beautifully and boost the nutritional value.

    Storage and Making Ahead 

    This soup keeps brilliantly:

    • Fridge: Store in an airtight container for 4 days.
    • Freezer: Freeze for up to 3 months. Thaw overnight in the fridge.
    • Reheating: Warm gently over low heat, adding water or stock if it thickens.
    • Meal prep tip: This is a great way to prepare a week of lunches in advance-portion into separate containers and chill or freeze.

    It also reheats beautifully in a microwave, pressure cooker or small saucepan.

    Equipment

    • Immersion/ Stick/ Hand Blender or Liquidiser

    Ingredients
     

    • 1 tablespoon oil
    • 1 brown/ yellow onion chopped
    • 3 garlic cloves peeled and sliced
    • 2 tablespoon root ginger peeled and finely chopped, optional
    • 1 tablespoon curry powder
    • 600 g (1.3 lb) carrots peeled and sliced
    • 600 g (1.3 lb) parsnips peeled and sliced
    • 500 ml (2 cups) vegetable stock
    • 400 g (14 oz) tin coconut milk rich and creamy
    • ½ lime juice only

    TOPPING SUGGESTIONS:

    • crispy chilli oil
    • roasted peanuts
    • crispy onion
    • fresh coriander cilantro

    Instructions
     

    • Heat oil in a large pot over low-medium heat. Add the onions, and sauté for 3-4 minutes until starting to soften.
    • Add ginger, garlic and curry powder and stir for another minute.
    • Add the carrot and parsnip slices, and mix to combine.
    • Reserve ~4 tablespoon of coconut milk for garnish. Add the rest of it to the soup pot. Pour the stock on top, and stir to combine.
    • Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, until the carrots and parsnips are very tender.
    • Blend the soup in a liquidiser or by using an immersion blender until velvety smooth. If it's too thick, add a splash of hot water. Stir in the lime juice just before serving.
    • Divide the soup between bowls, swirl the reserved coconut milk on top and garnish with coriander, peanuts and crispy chilli.
