French Onion Soup And Chicken
This recipe takes everything we love about French onion soup - sweet caramelised onions, savoury stock, melted cheese - and builds it around juicy chicken breasts. The result is baked French onion chicken that's rich without being heavy, comforting without being fussy, and genuinely satisfying.
If you enjoy recipes like our French Onion Sourdough Focaccia, this will feel like a natural next step: same flavours, different format. It's especially brilliant for special occasions that still call for comfort food.
Ingredient Notes
Here's a short list of ingredients you will need to make these French Onion Chicken Breasts:
- Chicken breasts. Boneless, skinless chicken breasts work best here. You can use chicken thighs next time if you prefer darker meat, but allow a slightly longer cook time.
- Onions. White onion or brown onions are ideal. Red onions will work, but they're sweeter and less savoury. Slice them thinly for even caramelisation.
- Olive oil. Use a good glug for the onions and a little more for searing the chicken. This helps develop flavour and prevents sticking.
- Balsamic vinegar. Just a tablespoon adds depth and helps deglaze the pan. It doesn't make the dish taste "vinegary" - it rounds everything out.
- Chicken broth / stock. Low sodium chicken stock is best so you can control the salt. Beef stock also works if that's what you have.
- Flour. This thickens the sauce into a gentle simmer rather than a watery broth.
- Gruyère cheese. Classic for French onion soup. Emmental or Comté are good substitutes.
- Seasoning. Salt, black pepper, and mixed dried herbs keep things simple. Garlic powder or a pinch of warm spices can be added if you like.

Step-By-Step Method
1. Caramelise the onions. Heat olive oil in an ovenproof pan over medium heat. Add the sliced onion with a pinch of salt and cook for 15-25 minutes, stirring often, until soft, golden, and reduced. Don't rush this step - it's where the best flavour lives.
2. Finish the onion mixture. Increase to medium-high heat, add balsamic vinegar, and cook for 2-3 minutes until sticky. Transfer onions to a bowl and set aside.

3. Season and sear the chicken. Season chicken breasts with salt, black pepper, and dried herbs. Add a little more olive oil to the pan and sear over medium high heat for 2-3 minutes per side until golden brown. Remove and set aside.

4. Make the sauce. Lower the heat. Pour in the chicken broth, scraping up the brown bits from the bottom of the pan. Whisk the flour with a splash of water. Pour the slurry in and cook for 5 minutes until slightly thickened.
5. Assemble and bake. Return the chicken to the pan, spoon the onion mixture over the top, and scatter over grated Gruyère. Bake until cooked through and bubbling. Cooking time will depend on the thickness of your chicken breasts - ours typically takes 15-20 minutes (we always measure the internal temperature to ensure it's reached 75°C.

Recipe Tips
- Take your time with the onions. True caramelised onions need patience. Keep the heat moderate and stir often to avoid burning.
- Don't skip the sear. Searing the chicken first locks in moisture and builds flavour - those brown bits matter.
- Watch the salt. Stock, cheese, and onions all contribute salt. Start with a pinch of salt and adjust at the end.
- Use an ovenproof skillet. A cast iron or heavy pan makes this a true one-pan meal with minimal washing up.
- Check doneness, not the clock. Chicken breasts vary. They're ready when the internal temperature hits 75°C.
Serving Suggestions
This caramelised onion chicken recipe loves a comforting side. Serve it with creamy mashed potatoes (perfect for soaking up the sauce), tenderstem broccoli, or a simple green salad with lemon juice and olive oil.
It also works beautifully with roasted vegetables or crusty bread if you're after a complete meal that feels generous without being heavy.

Storage and Reheating
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a covered pan over medium heat or in the oven until warmed through. Add a splash of stock if the sauce has thickened too much.
