    Chicken Fajita Pizza (Delicious Homemade Pizza Recipe)

This Chicken Fajita Pizza recipe is loaded with green bell peppers, spiced chicken, and a fajita-style tomato sauce - all on a homemade pizza dough base. It takes a little time to make everything from scratch, but if you're in a rush, we've got plenty of shortcuts to speed things up!

    Fusion Of Flavours: Fajita Meets Pizza

    Seb practically lived on chicken fajitas throughout his university years - he made them every other day without fail. Meanwhile, I was all about takeaway pizza on a Friday night, my ultimate student treat. 

    So it's only fitting that we've merged the two into one epic dish that brings together the best of Italian recipes and Mexican recipes. It's a great way to please pizza lovers and spice fans alike - fusion food at its finest!

    Ingredients Notes

    Don't be put off by a long list: these are all simple ingredients that you're likely to have in your kitchen already!  

    • flour: all-purpose or strong bread flour. 
    • fast-action yeast: also known as instant yeast.
    • caster sugar: or granulated sugar. 
    • salt. 
    • olive oil. 
    • fajita seasoning mix: made from paprika, cayenne pepper (or chilli powder), ground cumin, garlic powder, ground coriander, mixed dried herbs and a pinch of salt.

    • tomato paste: also known as tomato puree. 
    • chicken breast: we used boneless, skinless chicken breasts, but it could be made with chicken thigh fillets too. 
    • red onion: or shallots. 
    • cheese: we like a mixture of cheddar, Gouda and Mozzarella cheese. 
    • bell pepper: we used green peppers for colour contrast, but any colour will work.
    • red chilli pepper: optional, but if you like things spicy...

    Shortcuts

    No time to make everything from scratch? We've got you covered so you can enjoy homemade chicken fajita pizza any night of the week! 

    • Use shop-bought fajita mix or even enchilada sauce as a speedy stand-in for the homemade tomato base. 
    • Got leftover chicken or a rotisserie chicken in the fridge? Just season it with some fajita spice and you're good to go. 
    • Pizza dough can be swapped for ready-made dough, or go ultra-quick and use naan bread as your base. 

    Most elements-like the chicken, sauce, and seasoning-can be prepped ahead and stored in an airtight container in the fridge!

    Step-By-Step Method

    Step 1: Pizza Dough

    Place flour, yeast, sugar and a pinch of salt in a large bowl. Add the olive oil and warm water and mix it into a rough dough. Scrape it onto a lightly floured surface and knead for 5-10 minutes until smooth and cohesive (you can make the dough in a stand mixer fitted with a dough hook attachment, too).

    Place the dough ball in a clean, lightly greased bowl, cover it with clingfilm, and leave it to rest at room temperature for 1.5-2 hours, or until doubled in volume.

    Step 2: Fajita Seasoning Mix

    In the meantime, prepare the fajita seasoning by mixing all the ingredients and a pinch of salt in a small bowl.

    Step 3: Pizza Sauce

    Make the tomato sauce by mixing tomato paste with water and half of the fajita seasoning.

    Step 4: Fajita Chicken 

    Cut the chicken breast in half lengthways to create two thin "steaks". Sprinkle the chicken with the remaining fajita seasoning.

    Heat oil (or non-stick spray) in a large frying pan, add the chicken, and cook for 3-5 minutes on medium heat on each side until fully cooked through (cooking time will depend on the thickness of your chicken breast pieces). Cover the chicken with foil or a plate and set aside for later.

    Step 5: Assemble & Bake Chicken Fajita Pizza

    Preheat the oven to the highest setting (typically 230°C (450°F)), with a baking sheet inside it (you will slice the pizza onto it later).

    On a large piece of parchment paper, stretch the dough into 27-28cm (11in) round, keeping the edge thicker than the base.

    Spread the tomato sauce, avoiding the edge.

    Scatter red onion on top. Then cover everything with grated cheese.

    Shred the cooked chicken with two forks into bite-sized pieces or cut them into slices. Arrange them on top of the cheese alongside pepper slices. Add sliced chilli peppers, if using.

    Carefully slice the pizza on the parchment paper onto a preheated baking sheet. Bake the chicken fajita pizza in the centre of the oven for 12-14 minutes, until the edges are golden brown.

    Serving Suggestions

    When it comes to enjoying every last bite, don't skip the crust-dip it into a sour cream dip or chunky salsa for extra flavour.

    The best things to serve with this chicken fajita pizza, in our opinion, are a fresh green salad, corn on the cob and/or spicy potato wedges!

    For Pizza Dough

    • 185 g (1½ cups) flour all-purpose or strong
    • 3½ g fast-action yeast instant yeast
    • ½ teaspoon caster sugar
    • ¼ teaspoon salt
    • 115 ml (½ cups) lukewarm water
    • 1 tablespoon olive oil

    Fajita Seasoning

    • 1 teaspoon sweet paprika
    • ¼ teaspoon cayenne pepper
    • ½ teaspoon ground cumin
    • ½ teaspoon garlic powder
    • ¼ teaspoon ground coriander
    • 1 teaspoon mixed dried herbs

    Tomato Sauce:

    • 50 g (3 tablespoon) tomato paste
    • 3 tablespoon water + 1 teaspoon fajita seasoning

    Fajita Chicken:

    • 1 teaspoon oil
    • 1 chicken breast approx 150g, + fajita seasoning

    Other Toppings:

    • 1 red onion thinly sliced
    • 120 g (4.23 oz) cheese (Mozzarella, Gouda or other) grated
    • ½ bell pepper thinly sliced
    • red chilli pepper sliced, optional
