    Don't you just love an easy chicken recipe that only requires 4 simple ingredients and takes minutes of hands-on time? This Dijon Mustard Dill Chicken makes a crowd-pleasing dinner and is perfect for meal prep - simply use it in sandwiches, salads and grain bowls throughout the week! All you need to do is coat the chicken thighs in a tasty dill and Dijon concoction and bake!

    Versatility

    Dinner, lunch, a snack? These Dijon Mustard Chicken Thighs are perfect in a whole variety of your weekly meals!

    • Cut the Mustard Dill Chicken into small cubes, mix with mayonnaise and stuff it in croissants or between slices of bread for lunch!
    • A delicious way to add protein to grain bowls and salads. Top Moroccan Couscous Salad or use this in Santa Fe Salad! Oh, and it's a perfect addition to Waldorf salads!
    • A great way to use up leftover mustard dill chicken is to stuff them into tortilla wraps or pita pockets with a bunch of fresh veggies!
    • Serve it with polenta, creamy mashed potatoes or yellow rice for a complete meal (more side dish suggestions below).

    Ingredient Notes

    Here's what you will need (quantities, nutritional information and full instructions can be found in the recipe card at the bottom of the post):

    • Dijon mustard: the star of the show! Do not substitute for whole grain mustard as it will burn and have a bitter aftertaste. 
    • olive oil: rapeseed or avocado oil are great alternatives. 
    • dried dill: do not use fresh dill, as it will burn in the oven. However, use fresh dill to garnish the dish! 
    • salt and pepper, to taste.
    • chicken thighs: skinless and boneless chicken thighs. You may use boneless chicken breasts (we have tips and recipe adjustments in the FAQ section).

    Step-by-Step Method

    1. Preheat the oven to 180°C Fan. Line a large baking tray with foil (alternatively, use a non-stick baking tray with a little cooking spray).

    2. In a large bowl, combine mustard, olive oil and dried dill. Season with salt and black pepper.

    3. Pat chicken thighs with a sheet of paper towel, then place boneless skinless chicken thighs in the mustard mixture and mix well to coat.

    4. Arrange the chicken thighs in a single layer on a prepared baking tray and spoon any excess marinade on top. Place the chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through and golden brown.

    5. Serve with cous cous, mashed potatoes or rice and drizzle everything with any mustard dill sauce left in the chicken tray!

    TOP TIP: Take this recipe to the next level and make a Dill Mustard Sauce to drizzle on top! Simply double the marinade ingredients. Use half for the chicken and set half aside in a small bowl for later.  Once the chicken is cooked, pour any juices from the tray into the tangy mustard sauce, mix, and drizzle over the chicken. This is great if you're serving your chicken with drier side dishes, like rice, cous cous or bulgur wheat!

    How To Know If Your Chicken Is Cooked?

    Cooking time will vary depending on the thickness of the chicken. The best way is to check its internal temperature with a meat thermometer; it should reach 75°C (165°F). Alternatively, make sure the juices run clear and there's no pinkness in the meat.

    Can I Use Chicken Breasts Instead of Chicken Thighs?

    You may use skinless chicken breasts, but I would recommend cutting them into two thinner patties to maximise the surface area for the Dijon mustard and dill marinade. These will typically take about 18-20 minutes to cook through. Whole chicken breasts will take 25-30 minutes, depending on their size. 

    What To Serve Dijon Mustard Chicken Thighs With?

    If you are serving these Mustard Dill Chicken thighs as a main dish for dinner, be sure to add some delicious side dishes. We love them with our silky smooth Food Mill Mashed Potatoes or Turmeric Rice, but cous cous or cauliflower rice make great alternatives. 

    What is more, a nutritious vegetable side won't go amiss either. Serve these baked Chicken Thighs with Lemon and Garlic Tenderstem Broccoli, Courgette Ribbon Salad or fresh Green Bean and Cherry Tomato Salad!
