- tahini: light or dark tahini. Creamy light tahini will produce lighter, less bitter cookies. And that’s what we used.
- maple syrup: can be replaced with other sweetened, like honey, agave syrup, date molasses etc.
- lime juice: substitute with lemon or orange juice.
- lime zest: replace with lemon or orange zest.

Method
To begin, preheat your oven to 160°C Fan and prepare a large baking tray by lining it with baking parchment paper.
In a large bowl, combine sesame seeds, ground almonds, lime zest, and salt.

Add in the maple syrup, tahini, and lime juice, and thoroughly mix the ingredients together.
Next, take portions of the biscuit dough and shape them into 12 small, evenly-sized balls by gently pressing the mixture in your hands.

Once formed, gently flatten each ball slightly with the palm of your hands and sprinkle them with an additional amount of sesame seeds pressing them down to stick.
Place the prepared sesame seed biscuits in the centre of the oven and bake for approximately 15 minutes. They should turn golden brown and develop a crunchy texture on the edges. Transfer them to a wire rack to cool completely.
