    What Is Massaman Curry?

    Massaman curry is a unique dish in Thai cuisine, blending rich, aromatic spices with the creamy, nutty depth of coconut milk.

    Unlike other Thai curries, which rely heavily on fresh herbs and fiery heat, traditional Massaman curry takes inspiration from Persian and Indian influences, incorporating warm spices like cinnamon, cardamom, and cloves.

    The word "Massaman" is thought to come from "Mussulman," an old term for Muslim, reflecting the dish's historical ties to Muslim traders who introduced these spices to Thailand centuries ago.

    Typically made with slow-cooked beef or chicken, the rich Massaman curry sauce balances sweetness, savoury depth, and a hint of sourness from tamarind paste, making it a deeply comforting dish enjoyed across Thailand.

    The heart of any Massaman recipe is indeed its paste, a fragrant blend of ingredients that gives the curry its signature taste. A proper Massaman curry paste includes a mix of dried chillies, lemongrass paste, galangal, fish sauce, garlic, and shallots, combined with earthy, warming spices. A touch of shrimp paste adds umami depth, while tamarind paste brings a tangy, slightly sour note that rounds out the richness.

    Unlike the fiery red or green Thai curries, Massaman is milder, making it a favourite for those who love bold flavours without overpowering heat.

    Ingredient Notes

    • stewing beef: also known as braising beef. Choose a tougher cut of beef that has a bit of fat running through it so that it can withstand long cooking time without drying out (e.g. beef chuck). 
    • salt & black pepper. 
    • cornflour a.k.a. corn starch: may be replaced with plain flour (all-purpose flour). 
    • neutral oil: like sunflower, vegetable or rapeseed oil. 
    • massaman curry paste: we used ready-made massaman paste from Sainsbury's on this occasion, but you can make your own paste by following this great homemade massaman curry paste recipe. Note that curry pastes are not all created equal, and you may need more or less to allow the flavours to shine through without overwhelming. 
    • dark brown sugar: optional, but highly recommended. 
    • full-fat coconut milk: from a tin. 
    • brown onion: may be replaced with red onion or even shallots. 
    • baby potatoes: use any waxy potatoes that will keep shape after long cooking. Larger ones should be halved. 
    • salted roasted peanuts: we use half of the peanuts in the curry itself, and half for garnish. 
    • beef stock: or homemade beef broth.

    You will also need some garnishes, like a small bunch of coriander (cilantro), sliced red chilli peppers and lime wedges.

    Slow Cooker: Only The Best Way To Cook Beef Curry

    Slow cooking is hands down the best way to make a rich, flavour-packed beef curry or chilli (like we do in our Slow Cooker Chilli Con Carne recipe). It lets you use budget-friendly cuts of beef that break down beautifully over time, turning meltingly tender as they soak up all the spices from the curry paste. The potatoes absorb the coconut-infused sauce and aromatic flavours, making every bite even more delicious.

    Step-By-Step Method

    1. In a large bowl, toss the diced beef with salt, black pepper and cornflour to coat well.

    2. Heat the oil in a large frying pan over medium-high heat (you may use the bowl of your slow cooker if it is suitable for cooking on the hobs). You may need to do this in batches. 

    3. Add the beef and fry for 5-6 minutes, until browned all over. Scoop the beef into the bowl of your slow cooker, but reserve the pan with all the brown bits stuck to the bottom. 

    4. Reduce the heat to medium heat. To the same pan, add brown sugar, massaman curry paste, mix well and cook for 1 minute. 

    5. Pour in the stock and scrape the pan with a spatula to collect all the stuck-on brown bits. Then pour the mixture over the beef into a slow cooker bowl.

    6. Add half of the peanuts, onion wedges, baby potatoes and coconut milk. Mix well to combine.

    7. Cook the massaman beef curry on high for 5-6 hours or on low for 8-9 hours (cooking time will depend on the size of your beef cubes as well as the type of slow cooker).

    8. When the curry is cooked, skim a layer of fat floating on top with a spoon. Serve with plenty of rice garnished with a lime wedge, coriander, red chillies and the remaining peanuts.

    Serving Suggestions

    A bowl of slow cooker Massaman beef curry is pure comfort, but the right sides take it to the next level. Serve it with fluffy jasmine rice to soak up the rich, spiced Thai curry sauce. For extra texture, try a side of crispy roti or warm naan bread. 

    A squeeze of fresh lime juice just before serving brightens up the flavours beautifully. However you serve it, this is one delicious meal you'll want to make again and again!

    Storage and Leftovers

    Got leftovers? Lucky you! This delicious curry tastes even better the next day as the flavours continue to develop. Store any cooled leftovers in an airtight container in the fridge for up to 3 days.

    For longer storage, freeze portions in freezer bags or airtight containers for up to 3 months. When you're ready to eat, defrost in the fridge overnight and reheat gently on the stove or in the microwave until piping hot. Add a splash of water or coconut milk if the sauce has thickened too much.

    • 1 kg (2.2 lb) stewing beef cubed
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 tablespoon cornflour a.k.a. corn starch
    • 2 tablespoon neutral oil like sunflower oil
    • 4-6 tablespoon massaman curry paste
    • 1 tablespoon dark brown sugar
    • 400 ml (14 oz) full-fat coconut milk from a tin
    • 1 brown onion cut into 6-8 wedges
    • 500 g (1 lb) baby potatoes halved
    • 100 g (⅔ cups) salted roasted peanuts roughly chopped, half reserved for garnish
    • 200 ml (0.85 cups) beef stock

    To Garnish:

    • a small bunch of coriander roughly chopped
    • red chilli sliced
    • lime wedges

      Really nice n easy recipe. I did add a little water though and didn’t have peanuts so added about 1/2 cup natural crunchy peanut butter instead. Was beautiful!
