    There's something about sourdough cranberry white chocolate cookies that feels instantly festive - tart cranberries, creamy white chocolate chips, and that subtle tang from sourdough discard tying it all together.     Cookies and Sourdough Discard: Moisture Problem

    Classic cookie recipes don't usually contain added liquid. No milk, no water - just fat, sugar, flour and eggs. So when you introduce sourdough discard (which is roughly 50% water), things get interesting.

    Too much moisture can mean flat, cakey cookies instead of chewy ones.

    In this recipe, we solve that problem in two ways:

    • We use only an egg yolk, not a whole egg. The egg white adds extra water, and we simply don't need it here. The yolk brings richness without excess moisture.
    • We brown the butter. Heating unsalted butter over medium heat allows some of its water content to evaporate, leaving behind a nutty aroma and deeper flavour. Brown butter not only concentrates flavour but helps balance the hydration from the sourdough starter discard.

    We use the same method in our Chocolate Chipless Sourdough Cookies, Sourdough Ginger Cookies and all our Sourdough Chocolate Chip Cookie recipes. The result? Sourdough discard cookies with a chewy texture, crisp edges, and no soggy centres.

    Ingredient Notes & Variations

    • Unsalted butter. We brown it in a small saucepan to intensify the flavour. Let it cool slightly before mixing. Don't substitute with softened butter here - brown butter makes a huge difference.
    • White sugar & brown sugar. White sugar helps create those lightly crisp edges, while brown sugar adds moisture and chew. That balance gives you perfect cookies.
    • Egg yolk. Essential for richness. Using just the yolk keeps the dough stable despite the added discard.
    • Sourdough discard. Use discard at room temperature for best results. Avoid overly old discard that smells strongly acidic.
    • Plain flour (all-purpose flour). No need for bread flour here - all-purpose flour keeps the crumb tender.
    • Baking soda & salt. Grouped dry ingredients that help spread and balance sweetness.

    • Dried cranberries. Those tart cranberries cut through the sweetness and give beautiful festive colours.

    Variation Ideas

    • Add 60-80g macadamia nuts or pistachios for a nutty flavour and crunch.
    • Stir in ½ teaspoon cinnamon or a pinch of nutmeg for warmth during the holiday season.
    • Swap half the white chocolate chips for dark chocolate chips for contrast.
    • A tiny splash of almond extract or vanilla extract (¼ teaspoon) is another perfect addition for a subtle bakery-style depth.
    • Turn them into white chocolate cranberry oatmeal cookies by replacing 30g of flour with oats (expect a different texture).

    Step-By-Step Method

    1. Brown the butter. Melt the unsalted butter over medium heat in a small saucepan. It will foam, then turn golden brown and smell nutty. Remove from heat and cool slightly.

    TOP TIP: Don't walk away - brown butter can burn quickly.

    2. Mix sugars and butter. In a large mixing bowl, combine brown sugar and white sugar. Pour over the warm brown butter and beat using a stand mixer or hand mixer for 2-3 minutes.

    3. Add egg yolk. Beat in the egg yolk until slightly thickened.

    4. Add sourdough discard. Stir in the discard gently with a wooden spoon. Avoid overmixing.

    5. Combine dry ingredients. In a separate bowl, whisk together purpose flour, baking soda, and salt. Add to the wet ingredients and mix just until combined.

    TOP TIP: Overmixing after adding flour can develop gluten and make cookies tough.

    6. Fold in mix-ins. Add white chocolate chips and tart cranberries. Mix evenly.

    7. Chill the dough. Cover with plastic wrap and refrigerate for at least 4 hours.

    TOP TIP: Chilling prevents excessive spreading and improves flavour.

    8. Shape and bake cookies. Preheat oven to 180°C. Line prepared baking sheets with parchment paper or silicone mats. Divide into 8 cookie dough balls using a large cookie scoop. Place in a single layer on the cookie sheet.

    9. Bake. Bake cookies for 12-15 minutes until golden brown at the edges but still soft in the centre.

    For crackled tops, gently drop the baking tray from a small height immediately after baking.

    10. Cool. Leave for 5-10 minutes on the baking tray, then transfer to a wire rack or cooling rack.

    Storage

    Store your sourdough cranberry white chocolate cookies in an airtight container at room temperature for up to 4 days. They often taste even better the next day.

    To freeze:

    • Freeze baked cookies in a single layer, then transfer to a freezer-safe container.
    • Or freeze cookie dough balls and bake from frozen (add 1-2 extra minutes).

    They're a perfect treat to keep on hand for unexpected guests or festive baking.

    Ingredients
     

    • 75 g unsalted butter
    • 125 g plain flour all-purpose flour
    • ¼ teaspoon baking soda bicarbonate of soda
    • ¼ teaspoon salt
    • 75 g granulated sugar
    • 70 g light brown sugar
    • 1 egg yolk large
    • 80 g sourdough discard 100% hydration
    • 100 g white chocolate chips
    • 50 g dried cranberries

    Instructions
     

    • To make browned butter, place the butter in a small pan and heat it over medium heat. The butter should melt, then foam, and finally brown. Leave the butter to cool down slightly.
    • Add both brown and granulated sugar to a large mixing bowl. Pour the browned butter over the sugar, and using a handheld electric mixer, beat the mixture for 2-3 minutes until the sugar starts dissolving (it will still be grainy, and it's ok).
    • Add an egg yolk and whisk again for approx 2 minutes.
    • Add the sourdough discard and mix with a balloon whisk until combined (you don't want to use an electric mixer here as it will promote gluten development).
    • In a separate bowl, mix flour, baking soda and salt.
    • Add the dry ingredients to the wet ingredients and mix just enough to combine.
    • Finally, add the chocolate chips and cranberries and mix to distribute them evenly throughout the sourdough cookie dough.
    • Cover the dough and place it in the fridge for 4 hours.
    • Preheat the oven to 180°C (350°F). Line two large baking sheets with parchment paper.
    • Divide the cookie dough into 8 even pieces and shape each into a ball.
    • Place the balls onto the prepared baking sheets, leaving plenty of space in between them.
    • Bake the cookies for 12-14 minutes. The cookies should have browned crispy edges, but the centre should still be a little soft and puffy. As soon as you take the cookies out of the oven, drop the tray from 20cm height onto a kitchen worktop - this creates that signature cracked tops.
    • Leave them on the tray for 10 minutes to firm up. Then transfer the cookies onto a cooling rack.
