Slow Cooker Tuscan Chicken
Ingredients
- 600 g (1.32 lb) chicken breasts cut into bite sized pieces
- 2 tablespoon plain flour all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon dried mixed herbs like basil, oregano and parsley

- 250 ml (1 cup) chicken stock double strength*, hot
Towards the End of Cooking:
- 150 g (5.29 oz) spinach
- 100 g (3.53 oz) cream cheese full fat
- 50 g (2 oz) parmesan grated
- a small bunch of basil leaves roughly torn, stalks discarded
Instructions
- Place the chicken pieces in a bowl of a slow cooker. Add a pinch of salt, black pepper, paprika dried herbs and flour. Toss to combine.
- Add the garlic and sundried tomatoes.
- Pour hot stock over the chicken, cover with the lid and cook for 2.5-3 hours on HIGH, or 5-6 hours on low.
- Stir in the spinach and cook for another 15 minutes on high.
- Finally, stir in the cream cheese, parmesan and basil and serve immediately.
