    A good Slow Cooker Chilli Con Carne is one of those meals that quietly does all the hard work for you while delivering big, bold flavour. It's rich, comforting and deeply satisfying, but also incredibly simple to throw together. If you've ever wondered whether making chilli con carne in a slow cooker is worth it, the answer is yes and then some.

    When I was at uni, living in student halls and relying heavily on ready meals and a microwave, chilli con carne was often my go-to. It was easy, predictable and did the job. Little did I know how much better it could taste. These days, this version is a regular in our house. It's one of Seb's favourite meals, and I often make a big batch if I'm away for a few days so he has something genuinely good to eat.

    Why Make Chilli Con Carne In A Slow Cooker?

    Chilli con carne is a classic dish made with ground beef, tomatoes, beans and spices. It's hearty, warming and built on layers of flavour.

    Making it in a slow cooker takes it up a notch:

    • Slow cooking develops deeper flavour. The spices have time to bloom and meld into a rich, cohesive sauce.
    • Tender beef without effort. The beef mince becomes softer and more succulent compared to quick stove top versions.
    • Set and forget. Once everything is in, you can get on with your day. It's the easiest way to cook a proper chilli recipe.
    • Thicker, richer sauce. The long cooking time reduces the liquid naturally, creating a more concentrated tomato sauce.

    Ingredient Notes

    Here's everything you'll need for this easy slow cooker chilli recipe:

    • Beef mince (ground beef). I like using around 10-12% fat for the best balance of flavour and texture. A slightly higher fat content gives you a richer result.
    • Onion and garlic. Build the base flavour. You can use red onions or white onions interchangeably.
    • Spices (paprika, cumin, coriander, chilli flakes or chilli powder). These create that classic rich flavour. If you want a shortcut, a good-quality taco seasoning works well.
    • Tomato purée (tomato paste) and tinned chopped tomatoes. Add depth and body to the sauce.
    • Kidney beans. Classic choice, but you can use black beans or other canned beans if you prefer.
    • Cocoa powder. A small but powerful addition that deepens the flavour without making it taste like chocolate.
    • Bell pepper. Adds sweetness and texture.

    Step-By-Step Method

    1. Brown the beef. In a large frying pan over medium-high heat, cook the beef mince and onion for 5-6 minutes, breaking up the meat as it cooks.

    2. Add spices. In a small bowl, mix the spices, then add them to the pan. Cook for 1 minute until fragrant.

    3. Transfer to slow cooker. Tip everything into the slow cooker.

    4. Add remaining ingredients. Stir in the chopped tomatoes, tomato purée, beef stock, kidney beans and bell pepper.

    5. Slow cook. Cook on high heat for 4-5 hours or low for 7-8 hours.

    6. Finish with cocoa. About 30-45 minutes before serving, stir in the cocoa powder and continue cooking.

    7. Serve. Spoon over rice and finish with your favourite toppings.

    Recipe Tips

    • Brown the mince properly. This step adds flavour you cannot get later. Let it catch slightly at the bottom of the pan before stirring.
    • Adjust spice to taste. Add extra chilli flakes or a pinch of cayenne pepper if you like heat.
    • Use the right fat content. Too lean and the chilli can taste flat. A little fat goes a long way. But if you have super fatty beef, make sure to drain excess oil before adding the beef to the slow cooker. 
    • Let it sit before serving. Like most stews, it tastes even better after resting slightly.
    • Taste and adjust. Add a splash of hot sauce or a pinch of salt just before serving if needed.

    Toppings and Serving Suggestions

    Toppings are where this dish really comes alive. Go for a generous dollop of sour cream, a scattering of fresh coriander, grated cheese and maybe a handful of crushed tortilla chips or any other corn chips for crunch. These are your favourite chilli toppings, so don't hold back.

    For sides, serve it over rice for a classic option, or with warm flatbreads (we love sourdough tortillas or jalapeno cheddar sourdough focaccia). It also works brilliantly as part of a casual spread for game day or relaxed dinners.

    Storage and Making Ahead

    This is a great make-ahead slow cooker recipe. Store leftovers in an airtight container in the fridge for up to 3-4 days. The flavour actually improves next time you eat it.

    It freezes very well too. Portion it out and freeze for up to 3 months.

    To reheat, warm gently on the hob over medium heat, adding a splash of water if needed.

    Leftovers are incredibly versatile. Spoon it over a baked potato with plenty of cheese, use it as a filling for wraps, or pile it onto nachos.

    Ingredients
     

    • 500 g (lb) beef mince (ground beef) we used 12% fat
    • 1 brown onion finely chopped
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon chilli flakes a.k.a. red pepper flakes
    • 1 teaspoon sugar any type
    • salt and black pepper to taste
    • 400 g (14 oz) tin chopped tomatoes
    • 275 ml (1⅛ cups) beef stock made with 1 stock pot or stock cube
    • 3 tablespoon tomato purée a.k.a. tomato paste in the US
    • 400 g (0z) tin kidney beans drained
    • 1 red bell pepper cut into bite-sized pieces
    • 2 teaspoon cocoa powder unsweetened

    To Serve:

    • rice sour cream, fresh coriander (cilantro) and lime wedges

    Instructions
     

    • Fry the beef and onion in a large frying pan over medium-high heat for 5-6 minutes, stirring it often and breaking up clumps of meat as much as possible.
    • In a small bowl, mix the smoked paprika, cumin, coriander, chilli flakes, sugar, salt and black pepper. Add the spice blend to the beef, stir and cook for another minute.
    • Tip the browned beef mixture into the bowl of a slow cooker. Add the tin of tomatoes, tomato puree (tomato paste in the US), beef stock, drained kidney beans and red bell pepper.
    • Stir everything well, cover and cook on high setting for 4-5 hours, or low for 7-8 hours.
    • About 30-45 minutes before serving, stir in cocoa powder and continue cooking for the remainder of time.
    • Serve this slow cooker chilli con carne over white rice with a dollop of sour cream or cheese on top and a wedge of lime. Scatter some fresh herbs or spring onion (green onion on top).
