Baked Feta Puff Pastry Bites

- 320 g (11 oz) ready-rolled puff pastry
- 200 g (7 oz) feta
- 12 teaspoon caramelised onion chutney cranberry sauce or hot honey, or a bit of everything
- a sprinkle of sesame seeds, chopped pistachios, caraway or fennel seeds (see notes*)
- 1 egg for egg wash
Instructions
- Preheat the oven to 180°C (360°F) and line a large baking sheet with parchment paper.
- Remove the puff pastry from the fridge 15-20 minutes before using to prevent cracking. Unroll it on a lightly floured surface.
- Cut the pastry in half lengthways, then cut each half into 12 equal rectangles, giving you 24 pieces in total. Set 12 rectangles aside for the tops.
- Pat the feta dry thoroughly with paper towels. Slice it lengthways into two thinner slabs, then cut each slab into 6 pieces to make 12 flat pieces.
- Place the 12 base pastry rectangles on the prepared baking sheet.
- Add a piece of feta to the centre of each rectangle.
- Top each with 1 level teaspoon of red onion chutney, cranberry sauce, or hot honey.
- Place the remaining pastry rectangles on top. Press around the edges to seal, using a fork if you like for a neat finish.
- Brush the tops with lightly beaten egg and sprinkle with your chosen topping (see notes below).
- Bake for 20 minutes, until puffed and deeply golden.
- Remove from the oven and allow to cool for 5 minutes before serving warm.
