The Best Fakeaway With A Difference
We love ordering Orange Chicken from our local Chinese Takeaway place. And we have loved making zingy Lemon Chicken at home for years for a traditional Chinese-style dinner. But this Crispy Lime Chicken is our absolute new favourite!
Using lime as a base for the zingy sauce makes it an exceptional meal indeed. Whilst this is essentially a Cantonese-style recipe, lime adds a bit of a twist, giving this recipe a Mexican spin on it! Fresh, tart and sweet, the chicken almost tastes like a Chinese-Mexican fusion.

Ingredients and Substitutes
- chicken breast: boneless and skinless. You may substitute it with chicken thigh fillets, but not that the thighs will take a little longer to cook through.
- flour: plain (all-purpose flour). Skip the flour and add more cornflour for a gluten-free version.
- cornflour: also known as cornstarch.
- oil: vegetable or sunflower oil works best.
- soy sauce: dark, light or tamari.
- lime: juice and zest.
- caster sugar: also known as superfine sugar. It can be replaced with a tablespoon of clear honey.
- stock: chicken or vegetable stock.

Method
Mix plain flour, cornflour and a pinch of salt in a shallow bowl. Then add the chicken to the flour mixture and mix thoroughly to ensure every bit of the chicken is fully coated.
Heat about 3mm of odourless oil in a large non-stick frying pan on medium-high heat. Once hot, add the chicken and fry for 3 minutes, then stir and continue frying for another 3 minutes, making sure you cook the chicken on all sides (stir occasionally).
Once cooked, place the chicken strips on a paper towel-lined plate to absorb extra oil.


Whilst the chicken is cooking, make the lime sauce. Pour the lime juice, stock and sugar into a saucepan and bring to a simmer. Add the soy sauce.
In a small bowl, mix the cornflour with a tablespoon of water. Add it to the sauce and stir until the sauce starts to thicken slightly.

Add the crispy chicken and mix just enough to coat. Serve with lime zest scattered on top!

Notes
