- Sourdough discard. Best when not overly acidic or forming hooch; too sour and the muffins will taste tangy.

Your discard alone doesn't have enough leavening, so both agents are essential for fluffy sourdough pumpkin muffins.
Step-By-Step Method
1. Preheat & Prepare. Preheat the oven to 200°C and line a 12-hole muffin tin with muffin liners or cupcake liners (or coat your muffin pan with cooking spray)
2. Dry Ingredients. In a medium bowl, combine plain flour, baking powder, baking soda, salt, and pumpkin pie spice.

3. Wet Ingredients. In another large mixing bowl, whisk together pumpkin puree, vegetable oil, sourdough discard, both sugars, milk and eggs until smooth using a hand mixer or stand mixer.

4. Combine. Gently fold the dry ingredients into the wet mixture with a rubber spatula until just combined. The muffin batter should be thick but pourable; do not overmix.
5. Streusel Topping. Mix flour, sugar, and salt; rub in cold cubed butter until coarse crumbs form. Stir in pumpkin seeds if using.
6. Assemble. Divide muffin batter evenly into muffin cups, almost to the top, then sprinkle generously with streusel. Press lightly to help it stick.

Bake the muffins for 22-28 minutes until a wooden skewer inserted into the centre of the muffin comes out clean (I bake regular muffins for 22 minutes, but if I make 8 tall muffins in tulip cakes (as photographed), it takes about 27-28 minutes). - 100 g (½ cups) sourdough discard 100% hydration
- 100 g (⅔ cups) caster sugar or granulated sugar
- 100 g (½ cups) light brown sugar
- 60 g (¼ cups) milk
- 2 eggs large
For Streusel Topping:
- 70 g (½ cups) plain flour a.k.a. all-purpose flour
- 70 g (½ cups) granulated or caster sugar
- a pinch of salt
- 50 g (1.76 oz) butter cold, cubed
- 2 tablespoon pumpkin seed optional
Instructions
- Preheat the oven to 200°C (400°F). Line a 12-hole muffin tin with muffin liners.
- In a large bowl, combine flour, baking powder, baking soda, spices and salt.
- In a separate large mixing bowl, combine pumpkin puree, vegetable oil, sourdough discard, both types of sugar, milk, and eggs. Using an electric handheld mixer, beat the mixture for 1-2 minutes until well combined and increased in volume.
- Add the flour mixture to the wet ingredients and, using a rubber spatula, gently fold everything together. Avoid overmixing.
Make Streusel Topping
- In a medium bowl, mix the sugar, flour and a pinch of salt. Add the cubed butter and rub with your fingertips until the mixture resembles coarse breadcrumbs. If using pumpkin seeds, stir them in at the end.
Assemble and Bake
- Spoon the sourdough pumpkin muffin batter into the muffin cases, filling them almost all the way to the top.
- Spoon plenty of streusel mixture over the top of each muffin.
- Bake the muffins for 22-28 minutes until a wooden skewer inserted into the centre of the muffin comes out clean (I bake regular muffins for 22 minutes, but if I make 8 tall muffins in tulip cakes (as photograpghed), it takes about 27-28 minutes).
- Remove the muffins from the tin and let them cool down to room temperature.
