    Modern poke bowls now include a wide variety of fresh vegetables, fruits, and sauces - from spicy mayo to mango dressing - making them endlessly customisable. And this smoked salmon version puts a clever spin on the classic by swapping raw fish for delicately cured salmon, giving the bowl a subtle smokey flavour that pairs beautifully with sweet mango and citrus dressing.

    • Smoked Salmon: Use cold smoked salmon for a silky texture and mild flavour. Hot smoked salmon can work too, but it will be flakier and more robust. Or you can try my Teriyaki Salmon Poke Bowls instead!
    • Rice: Any type of rice works well - sushi rice, jasmine rice, or even a microwave-ready rice packet if you're short on time. You can also use brown rice or cauliflower rice for a lighter option. Let the rice cool slightly before topping.
    • Dressing: Made with soy sauce, sesame oil, lime juice, and rice vinegar, it brings freshness and tang. If you're avoiding soy, coconut aminos make a great substitute.
    • Toppings: Edamame beans, mango, spring onion, bell pepper, and cucumber add vibrant colour and texture. Feel free to use what's in your fridge - green beans, julienned carrots, green onions or even red chilli for some heat.
    • Sesame Seeds: Toast them lightly in a small pan for 2-3 minutes to intensify their nutty aroma.

    Step-By-Step Method

    Cook the Rice: Prepare the rice according to the packet instructions, using the measured water ratio provided. Drain well and let it cool slightly.

    Make the Dressing: In a small bowl, combine soy sauce, sesame oil, lime juice, and rice vinegar. Add a pinch of salt and pepper, then whisk or shake vigorously until combined.

    Assemble the Bowls: Divide rice between two bowls. Arrange mango chunks, edamame beans, cucumber, bell pepper, and spring onions neatly on top of the warm rice. 

    Add the Salmon: Tear or cut the smoked salmon into bite-size pieces and place on top.

    Variations + Alternative Dressings

As easy to make as it is delightful to the palate (and nutritious!) - Smoked Salmon Poke Bowl. This dish stands out for its simplicity, versatility, and bursts of flavour, combining the smoky richness of salmon with the crisp freshness of various veggies, all brought together by a tangy, umami-packed dressing.     Ingredients
     

    For The Dressing:

    • 1 lime juice only
    • 1 tablespoon soy sauce
    • 1 tablespoon toasted sesame oil
    • 1 tablespoon rice vinegar
    • a pinch of salt and pepper

    For Poke Bowls:

    • 120 g (0.65 cups) rice short-grain, but long-grain works well too
    • ½ ripe mango cut into chunks
    • 60 g (0.41 cups) edamame beans cooked
    • 70 g (⅓) cucumber sliced into matchsticks
    • ¼ bell pepper thinly sliced
    • 2 spring onions thinly sliced into matchsticks
    • 100 g (3.53 oz) smoked salmon
    • 1 teaspoon sesame seeds toasted

    Instructions
     

    • Cook rice following the packet instructions.
    • Make the dressing by placing the lime juice, sesame oil, rice vinegar, soy sauce and a pinch of salt and pepper in a jar, and shaking it vigorously for 30 seconds.
    • Once cooked, drain the rice and divide it between two bowls. Top the rice with all the vegetables and arrange pieces of smoked salmon on top.
    • Drizzle the dressing all over, scatter the top with sesame seeds and serve!
