    Blackened Fish Fajitas (Easy, Quick and Delicious)

    These Fish Fajitas are what happens when a quick weeknight dinner still feels exciting. Smoky spices, tender white fish, sweet peppers and a squeeze of lime all wrapped up in warm tortillas - simple ingredients, big payoff. They're lighter than beef fajitas, faster than chicken, and honestly, one of my favourite ways to cook fish without overthinking it. If you like meals that land somewhere between comfort food and "I actually feel good after eating this", this is one to keep on repeat.

    Best Fish To Use In Fajitas? 

    When it comes to fajita fish, you want something mild, flaky and quick-cooking. White fish like basa or tilapia works perfectly here - they take on spices beautifully and cook in just a couple of minutes over medium-high heat.

    Sea bass or cod also work well if that's what you have. Or you can try our Blackened Salmon here. Frozen fish is absolutely fine too, just make sure it's fully thawed and patted very dry with paper towels before seasoning. Excess moisture is the enemy of a good char.

    Avoid overly oily fish for this one - mackerel is great elsewhere, but it tends to overpower the classic fajita flavour profile.

    Step-By-Step Method

    1. Season the fish. Pat the fish dry, then mix smoked paprika, cumin, coriander, garlic powder, chilli powder or cayenne, salt and black pepper in a small bowl. Toss the fish strips until evenly coated.

    2. Cook the vegetables. Heat a large skillet or non-stick frying pan over medium-high heat with a tablespoon of olive oil. Add the sliced red onion and bell peppers (or red capsicum) and sauté for 5-7 minutes until softened with a little char. Remove from the pan and set aside.

    3. Cook the fish. Return the pan to high heat. Add a small drizzle of olive oil if needed, then place fish in a single layer. Cook for 2-3 minutes per side, until charred on the outside and just cooked through. Don't move it too much - that's how you get colour.

    4. Warm the tortillas. Heat flour tortillas in a dry pan or microwave until soft and pliable. Cold wraps are a crime.

    5. Assemble and serve. Spread sour cream on each tortilla, add peppers and onions, pieces of fish, avocado and fresh coriander. Finish with a generous squeeze of fresh limes and serve straight away.

    Recipe Tips

    • Dry fish = better flavour. Always pat fish dry before seasoning. Moisture stops spices from sticking and prevents proper browning.
    • High heat, short cooking time. Fish cooks fast. Overcooking turns it dry and sad. Once it flakes easily, it's done.
    • Don't overcrowd the pan. Cook fish in batches if needed. Crowding causes steaming instead of charring.
    • Adjust the heat level. Cayenne pepper adds real heat; chilli powder is milder. Start small and build up.

    Serving Suggestions

    Fish fajitas are brilliant served family style, piled into the middle of the table so everyone builds their own. On the side, try a simple tomato salsa, salsa verde, or a crunchy cabbage slaw.

    If you want to switch things up, these fillings work just as well in a lettuce wrap for a lighter option, or even spooned over rice for a fajita-style bowl. Leftover fish can be flaked into fish tacos the next day with a little lime juice and sour cream.

    Ingredients
     

    Blackened Fish

    • 200 g (7 oz) basa or tilapia fillets cut into thick strips
    • 1 teaspoon smoked paprika
    • ½ teaspoon ground cumin
    • ½ teaspoon ground coriander
    • ½ teaspoon garlic powder
    • ¼ teaspoon chilli powder or cayenne adjust to taste
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 1 tablespoon olive oil

    Veg

    • 1 tablespoon olive oil
    • ½ red bell pepper sliced
    • ½ green bell pepper sliced
    • 1 small red onion thinly sliced

    To Serve

    • 4 wheat tortilla wraps 20 cm (7.5 in)
    • 1 ripe avocado sliced
    • 4 tablespoon sour cream
    • small handful fresh coriander (cilantro) chopped
    • lime wedges

    Optional extras:

    • Pickled red onions
    • Jalapeños finely chopped
    • Shredded lettuce or cabbage for crunch

    Instructions
     

    • Pat the fish dry. Mix all the spices together, then coat the fish strips.
    • Heat a large frying pan over medium-high heat. Add olive oil, then the peppers and onion.
    • Cook for 5-7 minutes, until softened with a bit of char. Remove from the pan.
    • Wipe out the pan if needed, then return it to high heat.
    • Add the fish and cook for 2 minutes per side, until well-charred on the outside and just cooked through.
    • Remove from heat.
    • Warm the wraps in a dry pan or microwave until soft and pliable.
    • Spread a spoonful of sour cream on each tortilla. Then fill each tortilla with pepper and onion mixture, blackened fish, avocado slices and fresh coriander. Add any optional extras
    • Finish with a generous squeeze of lime. Enjoy!
